Florida eats, March 2014.

Recent posts over at ESPN: on young Dodgers players, on Jose Abreu and other White Sox, and on Nick Gordon and other Florida prep kids. I also held a regular Klawchat this morning.

After I posted my dining guide to Arizona, I was asked – as I am every year – when I’m going to do a similar one for Florida. The answer, of course, is never. Here’s why:

* I lived in Arizona for just under three years. I have never lived in Florida.

* All of the spring training sites in Arizona are located within about 30 miles of downtown Phoenix. The biggest gap between any two parks is a 75-minute drive. It might take you that long to get through Tampa, never mind far-flung sites like Fort Myers or Viera.

* Arizona has a wonderful, thriving culinary scene. Florida has oranges. Actually, the food scene in Miami is supposed to be pretty good, but there are no teams there.

So this is more of a quick round-up of where I ate on last week’s trip, not an exhaustive guide to eating in the state where you shouldn’t even bother going for spring training unless your favorite team is there. And even then you should think twice.

In the greater Orlando area, I had two meals of note at off-Disney sites (I stay at WDW because they own us and it’s cheaper to stay there than anywhere else), but also wanted to mention two others. One meal was at 4 Rivers, a wonderful Texas-style barbecue joint in Winter Garden about which I’ve waxed poetic many times. Get the moist brisket, the corn, and the collard greens. The smoked sausage is pretty good too, although it’s not always that hot. Their “burnt ends” aren’t my idea of burnt ends, so I haven’t ordered them again. There’s another location of 4 Rivers in Longwood.

I also ate at Prato in Winter Park, a trattoria focused on pastas and pizzas located on a cute, expensive-looking street well off I-4. I had dinner with a scout, so we split their meatball appetizer – three small, moist meatballs, firm enough to hold their shape, served with just a coating of tomato sauce on a bed of creamy polenta with some sauteed onions. I had to get the pizza, because I’m pizza-obsessed, and it was solid-average – good crust, a little doughy without much char, but with great toppings, including mixed mushrooms and arugula. I wouldn’t go well out of my way again to eat here, but if I were in the Winter Park area to see a player I’d consider it worth visiting again.

The Ravenous Pig was the best meal I had during the winter meetings, but I never had the chance to write the meal up afterwards and won’t dare to do it the injustice of writing it up now. I’ll just say that it’s the best restaurant in greater Orlando in my own experiences, and I want to try its sister restaurant, the more casual Cask and Larder, the next time I’m in the area. There’s a focus on local fare, artisanal ingredients, house-made charcuterie, and cocktails. You can’t lose.

I had to see a prep pitcher in St. Petersburg and went to Bella Brava, which has a little bit of a chain-restaurant feel (think Carrabba’s) but better food than that would indicate, other than the use of dried rather than fresh pasta. I had their slow-braised pork belly (which apparently is also smoked) rigatoni with pepper/onion confit, fresh rosemary and fennel, and crispy lardons, with the jus from the meat serving as the sauce. It was as good and rich as it sounds other than the dried pasta, which seemed flat and incongruous next to the powerful flavors of the meat and the sweetness of the pepper confit.

With two games in Dunedin, I took the chance to visit some old haunts but had mixed results. Eli’s BBQ Shack disappointed; Eli passed away a year ago of leukemia, and unfortunately the chopped pork wasn’t the same, coming out dry and tough with no bark. Casa Tina in downtown Dunedin was just as good as I remembered, solid-average to a tick above, serving authentic Mexican food with great attention to detail in the food; my entree was good but it was actually the salsa that blew me away, as the tomatoes tasted like they had just been picked that morning. The Whistle Stop Cafe in Safety Harbor still had good food, although the menu has changed and is now much bigger with more upscale (expensive) fare as well as the old sandwiches and salads, but the service – never good – was unbelievably slow.

Phoenix-area eats, March 2013 update.

I hope by now you’ve seen my spring training dining guide for this year, but of course, this is a month when I try a lot of new places because I’m out of the house for games. Here are a few places I haven’t reviewed on the blog previously, and I’ve updated the guide where appropriate.

I’ve been to Davanti Enoteca in Scottsdale twice now, once for lunch and once for dinner, with the latter the far more memorable experience. The restaurant’s publicist had urged me to try their linguine con riccio di mare e granchio, pasta with sea urchin and crab. (Riccio di mare literally means “hedgehog of the sea.”) The sea urchin, which sushi fans among you know as uni, is in the sauce, an umami-filled buttery coating that’s just barely enough for the pasta and small pieces of delicate crab meat, a phenomenal and, for me, entirely new dish that was only marred by a few bits of crab shell. Davanti is the only place in Arizona that I’ve found that serves white anchovies, known as boquerones in Spanish; here they’re served as fillets, lightly marinated and presented with pecorino sardo, marinated olives, and a small salad of arugula and celery. The bruschetta varies daily; on Saturday it was goat cheese, arugula, small crispy bits of prosciutto, and a light balsamic glaze, nicely balanced with the creaminess of the cheese and peppery arugula balancing the salty-sweet prosciutto. I’d skip the honeycomb focaccia, which the server recommended highly – it’s flat, Ligurian-style, almost cracker-like, with a soft cow’s-milk cheese inside, but overall I found it pretty bland. Dessert was also disappointing – they were out of my first choice, the mille foglie (misspelled as “millie foglie” on the menu, which sounds like a supporting character in a Nero Wolfe novel), and my second, the peanut butter mousse, had a great texture but no flavor. For lunch, they offer a small selection of fresh sandwiches, including an authentic porchetta, served with rapini, aged provolone, and hot peppers (a lot of them), for a very reasonable $9. EDIT: Davanti closed in May of 2013.

On Friday night, I tried Federal Pizza in CenPho – that’s what the cool kids call central Phoenix, apparently, although to me that’s just “downtown” – with Nick Piecoro and a colleague of his at the Republic. After a 90-minute wait for a table, the pizza had to meet a pretty high standard to satisfy me, but it did, better than ‘Pomo in Scottsdale and on par with Cibo, which surprised me given how strong both of those pizzerias are. Federal’s crust is soft and spongy, thin but not Neapolitan-thin where the center often can’t support the toppings, but also not as strong and cracker-like as Bianco’s is. The two pizzas we ordered arrived with plenty of char on the exterior but not underneath, which is good. I went with the Brussels sprout pizza, with manchego, large bits of bacon, and a hint of lemon; Nick ordered the meatball pizza, with house-pulled mozzarella, tomato sauce, and basil. Both were excellent, although I preferred the Brussels sprout pizza for its novelty and for the great combination of the roasted sprouts, which have a little sweetness when they’re caramelized, with the saltiness of the bacon (a great friend to basically all things green) and the Manchego and the acid from the lemon. Nick’s friend, Amy, ordered the roasted vegetable board, which was both very fresh and very generous, with more cauliflower, roasted to a nice shade of brown on the cut sides, than I could ever eat at one sitting.

I never wrote up crudo, although it’s on the dining guide and I’ve recommended it to many of you individually. Crudo’s menu has four major sections: four or five crudo (raw) seafood dishes that give the restaurant its name, four plates built around fresh mozzarella, four pasta/risotto options, and four grilled proteins, as well as a few sides. Nearly everything my daughter and I ate here was outstanding; she loved the fresh mozzarella with bacon relish, I couldn’t get over the quality of the albacore (with apple, truffles, and black garlic) in the crudo preparation, and we both adored the crispy pig ears appetizer and the squash dumplings with pork ragout (this was in November when that was seasonal). They also feature desserts by the great Tracy Dempsey, and, again sticking with the fall theme, we had an apple tart with crème fraîche that was superb, especially the crust which was firm when you cut the tart but shattered in your mouth so all of that imprisoned butter could burst forth as you bit into the apple. If I were trying to impress a woman on a date, this is where I’d take her.

Further out here in the east valley boonies, I tried the new Whiskey Rose Saloon BBQ location in south Chandler, which they promise will be the first outpost of many … although I doubt it, as the food was pretty mediocre across the board. They are smoking the meats, but there was very little smoke flavor anywhere to be found, and what we got – I went with Phoenix New Times/Chow Bella food critic Laura Hahnefeld and her husband, Jay – was not very hot when it reached the table. About the best I can say for the food is that nothing was overcooked to the point of dryness, but none of it had much taste, and the amount of fat left on the brisket was kind of shocking. The conversation clearly outpaced the food here. By the way, Laura also has the skinny on the awful makeover of Distrito in Scottsdale’s Saguaro hotel.

I’ve also been remiss in failing to mention Queen Creek’s San Tan Flats, which is more of an experience than a restaurant, offering basic grilled fare like burgers, steaks, and chicken breasts with Jack Daniels sauce, but in an outdoor venue with fire pits (bring your own marshmallows … no, really, we do) and live country music. Located on Hunt Highway just east of the end of Ellsworth Road, San Tan Flats gets pretty jammed on the weekends but it’s very kid-friendly and the food is adequate for an evening of hanging out with friends, with the three of us eating there for under $40 unless there’s alcohol involved.

Nashville eats, 2012 edition.

I ate really, really well in Nashville this week, which is what happens when you get the hell out of the Opryland Hotel, itself a testament to what happens when capitalism’s DNA mutates and reproduces out of control. Over the last five years it seems that Nashville has had a culinary boom, and I had more places I wanted to visit than I could have gotten to in a week.

Our first big group dinner was Monday night at City House, one of the most-recommended restaurants in Nashville by those of you who live there, and one of the most enjoyable meals I have ever had when you combine the food and the company at the table. Because of the size of our party, we were served family-style, which had the benefit of allowing us to all try more items. I thought two items really stood out above everything else: the belly ham pizza and the bread gnocchi. We tried all four pizzas on the menu, with the anchovy pizza the only disappointment, but the belly ham pizza with fresh mozzarella, oregano, and a pretty healthy dose of red chili flakes was incredible, from the light, almost cracker-like crust to the bacon-like pork to the bright, creamy cheese. The gnocchi, without potato as traditional gnocchi would have, were the best I’ve ever eaten (caveat: potato gnocchi don’t thrill me) and are served with a scant tomato sauce, braised pork butt, and grana padano (essentially Parmiggiano-Reggiano from cows near but not in that specific region). That’s the dish everyone was talking about the next morning. The octopus starter everyone’s joked about was just fair, cooked correctly (that is, not till it was a spare tire) but still not that pleasant a texture and without the powerful flavors to stand up to the fish. I loved the rigatoni with rabbit sugo and fennel, kind of like a duck ragout with big flavors from the aromatics and tomato. That night’s special dessert was a chocolate-peanut butter pie that would put Reese’s out of business.

Tuesday night’s dinner included at least 16 of us from the media side at the Pharmacy Burger Bar and Bier Garden, one of the best burger places I have ever visited. Their burgers are made with Tennessee-grown beef and served on stark white rolls that are as soft as potato bread and are custom-baked for the Pharmacy. They hand-cut their fries, including skin-on sweet potato fries served without that annoying sugar topping so many places use or any tricks to make them crispier, and they serve their own tater tots, which might have been an even bigger hit than the burgers. They also had a strong selection of regional beers, including the Nashville-brewed Yazoo Gerst Amber beer, so smooth it went down almost like soda and might be too mild for folks who are more serious about their beer than I am. As for the burgers, most of us went for their signature item, the Farm Burger, with bacon, country ham, and a fried egg on top, which is a top five burger for me at this point.

We ventured out to two new lunch places, Fido and Marché. Fido is related to the Bongo Java coffee shop and retains that coffee-shop vibe even when serving sandwiches or fish entrees like the trout special I ordered, along with a cinnamon cheesecake that Jonah Keri said was to die for and a chocolate-chocolate chip cookie that also really strong. Marche offers a duck confit sandwich about which one probably needs to say little more, because really, it’s some damn good duck confit. Molly Knight ordered a latte which was large enough to drown an orangutan. Both places were worth hitting again, especially because they gave us a chance to eat somewhat more healthful items in expectation of big dinners.

On the way to the airport I made a detour to revisit Arnold’s Country Kitchen, a meat-and-three place that seems to rate as Nashville’s best and where I had a great meal back in 2007. The meats change every day as do about half of the sides available; Thursday’s options included roast beef, while mashed potatoes and turnip greens (with ham hock) appear to always be options. One of the special sides that day was fried green tomatoes, about four-inch discs breaded with seasoned bread crumbs and quickly deep-fried. They’re not good for you – none of this is – but the salty-sour combo was surprisingly satisfying. For dessert, they offered four different kinds of pies plus a few other options. The hot pepper chocolate pie wasn’t very popular but I’d gladly eat that again – the filling had the texture of a dense mousse and the flavor of half-cooked brownies, and once you finished a bite, a warm heat took over from what I assume was cayenne pepper. A meat, three sides, bread (which I skipped), dessert, and a drink ran about $13 and I was full for the whole flight back to Arizona.

Finally, the headline meal of the trip was at The Catbird Seat, named one of the ten best new restaurants in the U.S. this year by Bon Appetit. This was the most expensive meal I have ever eaten, and one of the longest at over four hours and nine-plus courses. It’s a set tasting menu, and the food tends toward the experimental – not quite Alinea territory but along the same philosophical lines. All of the courses hit the mark save one, and I was challenged by a number of the dishes to rethink ingredients or flavors. If you’re not interested in a $150+ meal that goes on for days, feel free to stop reading here – that’s why I’m covering this last. Also, each dish comes with a wine pairing, which the sommelier introduces and explains in some depth, but as the group’s driver I skipped this part.

* The meal began with quarter-sized ‘oreos’ made of a parmiggiano cream or mousse sandwiched between two slices of porcini mushrooms, producing a gustatory dissonance as my palate kept expecting sweet. The point of this starter, other than just being playful, became evident later on.

* The first actual course was a trio of one-bite items, including a raw Island Creek oyster with kimchi and a lime foam, a “cracker jack” using shiitake mushrooms roasted until crunchy, and a rectangle of chicken skin baked until crunchy and topped with ground red pepper for a twist on Nashville hot chicken. That’s the first raw oyster I’ve ever eaten, incidentally – growing up on Long Island during a time when raw oysters were quite dangerous to eat, I had no exposure to them and had (have?) a long-standing bias against raw shellfish of any sort. The faux cracker jack was the best item here, combining the earthiness of the mushroom with the hint of sweetness and crunch you’d expect from something that looks like caramel corn.

* Second course was a diver scallop crudo, sliced thinly, served with their own dashi, smoked roe of Arctic char, crumbled chicken skin, lime juice, finely minced serrano chiles, soy sauce, and shiso leaves. As complex as that sounded, and even looked, the end result was perfectly balanced and nothing overshadowed the scallop itself. This was also one of the largest portions of the night.

* Third course was a soup of roasted sunchoke and caramelized yogurt, poured tableside over a quarter of an artichoke heart, shaved roasted fennel, black olive, black garlic, and a tiny bit of black truffle. Cooked yogurt is very much not my friend, but the texture of the soup was unreal, like double cream, and the roasted sunchokes gave it the appearance of a rich light-brown roux with hints of sweetness and a nutmeg-like spice.

* Fourth course was Arctic char with cream cheese gnudi, dill-infused oil, pureed Meyer lemon (rind and all, apparently), capers, and sorrel leaves. I love Arctic char, a fish nearly indistinguishable from salmon, but prefer it cooked a little past medium rare; this was practically swimming upstream. The gnudi, marble-sized spheres of (I presume) cream cheese with just enough flour to give them structure, had the texture of potato gnocchi and just a hint of the tang from the cheese so that they could soak up some of the dill flavor below them. (Gnudi means “nude” in Italian and refers to a filling cooked without its pasta wrapper.)

* Fifth course was probably the restaurant’s signature dish, roasted pigeon leg, served with the claw still on it, along with a celeriac ribbon, smoked butter, cured egg yolk, chestnut purée, and huckleberry reduction, with the last two items perhaps a play on peanut butter and jelly. Pigeon (usually marketed here as “squab,” for obvious reasons) was another first for me, here cooked rare with a flavor like that of a duck breast with a texture a little closer to a rare lamb rib chop. The chesnut purée stole a fair bit of the show, though, with the crisped skin of the pigeon also standing out.

* Sixth course was a large medallion of rare “Wagyu” beef ribeye with roasted Belgian endive, little spheres of Asian pear, roasted maitake mushroom, and walnut butter. This was by far the most generous portion of the night, but a little tricky to eat with all the components in one bite, in part because the beef, while tender, wasn’t quite that “like butter” consistency I’d expect from that particular cut. (There’s also a lack of labelling standards for “Wagyu” beef, but I’ll trust that the Catbird Seat is at least buying very high-quality inputs.) Getting a sphere of anything the size of a large marble on to the fork with four other elements is nearly impossible, even though the fruit’s mild sweetness was a perfect complement to the various savory elements. Great ideas here, but perhaps not fully executed.

* Seventh course was the one whiff for me, Rush Creek Reserve cheese with a curried granola, rose-water honey, and apricot jam. The cheese looks like mayonnaise and had a heavy, cheddar-y flavor that I simply don’t like. It’s supposed to be one of the best domestic cheese around, so I’m chalking this up to my specific palate and not the dish itself, although Jonah expressed his dislike of the curried granola, which I probably could eat by the bowl.

* From there we move to desserts, three plates although they’re listed on the menu as just two courses. Course 8A was a play on coffee and tea, with coffee ice cream, molasses cake, rooibos (red tea) foam, and a hazelnut and coffee crumb, just insanely good across the board, a dessert where everything was sweet but nothing was too sweet, and a great way to show off the complexity of rooibos’ flavor. (I happen to love the stuff, and especially like to drink it when I’m sick because it has no caffeine.) Course 8B was a maple-thyme flan-like custard cooked in an egg shell with a maple glaze on top and a single stick of bacon protruding from the top – an egg-and-bacon dish that implied there were pancakes on the plate that required the use of maple syrup.

* The ninth course was the most impressive dessert from an execution perspective: charred oak ice cream, vanilla cake, pineapple gelée, and bourbon balls – bourbon encapsulated in a very soft gel so they’d explode in your mouth almost on contact. The ice cream here was smoky but also had subtle flavors that reminded me of caramel, coffee, and of course whiskey, and its texture was as smooth as that of good gelato.

* Finally, another small plate of three Oreo-like items appeared, but this time, they’re sweet, with chocolate wafers and a vanilla cream. They don’t taste anything like the real thing, but speaking as a devout chocoholic, I appreciated the hit of bitter cocoa at the end of the meal.

Someone in Nashville asked me if I preferred the meal at City House or the one at the Catbird Seat but I struggled to compare them. City House is pretty straightforward upscale cuisine – recognizable dishes, done well from start to finish, using fresh, local ingredients with outstanding execution. You will also leave there stuffed. Catbird Seat is experimental and challenging; it isn’t food to be consumed so much as it’s food to be considered. Your preference would likely depend on what you prefer. Catbird Seat is doing things very few restaurants outside of New York, LA, and Chicago are doing, and that makes it the “better” restaurant, the place I’d absolutely take my wife for a special occasion or a client I wanted to blow out of the water. On the other hand, if my goal was to go have a boisterous meal with nine friends, which was what we did on Monday night, I’d take City House. You can’t lose either way.

Phoenix eats, fall 2012.

Today’s installment of the offseason buyer’s guides, covering the catching market, is the end of the series. I’ll do award posts starting on Monday with Rookies of the Year.

Barrio Queen, in Old Town Scottsdale, is a spinoff of Phoenix’s Barrio Cafe, sharing some menu items but focusing more on street tacos, roughly four-inch tortillas generously filled with about 20 different options diners can choose from a sushi-style paper menu that covers beef, chicken, pork, seafood, and vegetarian fillings, all ranging from $2.50 to $5 or so. The restaurant’s signature cochinita pibil (slow-roasted pork shoulder) appears in taco form, as do carnitas, grilled flank steak, mushrooms and huitlacoche (corn fungus), and smoked salmon. The carnitas taco was the best of the four I tried, with the meat shredded and slightly crispy on the edges, although the smoked salmon with roasted cactus paddle (nopal) was a close second. The mixed grilled peppers taco blew my mouth off, although that doesn’t make it a bad thing. We also tried the chili verde fries, which are just what they sound like, with pork and cheese, a little too over the top for me although the chili verde itself was delicious. The food itself destroys any other tacos I’ve had in the Valley save downtown’s Gallo Blanco, and the prices are comparable to and even below some well-reviewed places like the overrated La Condesa.

Distrito, in the Saguaro hotel just up Drinkwater from Scottsdale Stadium (where the Giants train), also goes for a Mexican street food vibe, but the dishes are more complex and upscale, with price points to match. The mahi-mahi tacos ($14) come three to an order, with large pieces of fried fish on top of chipotle remoulade and a red cabbage slaw on top. Their cochinita pibil ($12) comes already sliced, which is a little odd, but the meat was tender and was served with a slow-cooked pineapple achiote sauce that was actually even better the next day. Their huarache de hongos ($10) flatbread includes mixed wild mushrooms as well as huitlacoche and a topping of melted mild white cheeses. The guacamole ($10) with cotija cheese was silently spicy but also had some of the creamiest avocadoes I have ever tried, giving them a faintly sweet taste as well. We tried one of the vegetable sides, the esquites ($6), sweet corn served off the cob, tossed with lime and queso fresco, served on a bed of chiptole aioli (probably the same that’s under the mahi mahi), a fork-friendly equivalent to the charred corn with cotija and paprika dish that’s become very trendy across the U.S. over the last few years. The one dish that fell a little short for me was the queso fundido ($12), duck barbacoa with roasted chilies served under a sheet of melted cheeses; the flavor of the duck itself completely disappeared under the cumin, red peppers, and poblanos.

While I’m still covering Scottsdale, I’ll throw in yet another endorsement of Baratin Cafe, which might be the single best value in the Valley because you’re getting very high-end ingredients and preparations for roughly $10 per salad or sandwich. The catch is that the menu changes daily and it is small – one salad, one sandwich, one “potted” (forcemeat or pate) or pickled dish, a snack, a starter, a vegetarian plate, and a dessert. I’ve been four times, always showing up with no idea what would be on the menu, ordered the sandwich each time, and have been thrilled with everything, even the day the sandwich was vegetarian and built around eggplant, probably my least favorite vegetable (technically a berry) of all. Baratin piggybacks on the purchasing power and prowess of FnB, which is just around the corner on Craftsman, but you can get in and out of Baratin at about half the cost of its more sophisticated sibling. If you’re staying in Old Town and are an open-minded eater, this is the one place I’d encourage you to hit above all others.

Moving over to Phoenix, Chris Bianco’s newest place, bearing the Google-unfriendly moniker Italian Restaurant, opened earlier this year in the Town and Country shopping center just off route 51 between Highland and Camelback. The focus here is on house-made fresh pastas produced from Arizona-grown wheat and served with simple, mostly traditional sauces that rely on fresh ingredients, with the menu changing frequently to reflect seasonal items. We started with the farinata, a traditional Italian crepe made from chickpea flour and cooked in a very hot cast-iron skillet until crispy. Italian Restaurant’s version includes red onions, black olives, and sage leaves, balancing the sweetness and tang of the onions with the brininess of the olives and the earthiness of the chickpea flour and sage, bringing a very satisfying crunch from the high heat to which it’s exposed during cooking. (You can try this very similar recipe if you want to make it at home as I’ve done.)

For the entree, I went with the papardelle bolognese, which is among my favorite sauces but one I rarely eat because it’s so often done poorly – overcooked, made with too much cream, made only with beef, made with cheap tomatoes, whatever. Bianco’s place does it right, starting with giant sheets of pasta closer in dimensions to lasagna, cooked just barely to al dente, served with a vibrant red sauce without the heaviness of most bolognese attempts (including a few of my own at home). My parents were visiting that week, and my mother chose the cavatelli with Schreiner’s sausage, roasted cauliflower, and spring onions; the sausage and pasta combination was a perfect marriage, with the al dente cavatelli bringing a bready texture to the meat, although the cauliflower was overrun by other flavors in the dish. Portions are generous but not unfinishable and prices are reasonable for the quality you’re getting, with each pasta dish running $15.

I also tried Chris Bianco’s legendary sandwich shop, Pane Bianco, and was a little disappointed, at least compared to the high expectations I’d gotten from friends who’ve tried it. The bread was what let me down, which is shocking since Bianco is known for his pizza doughs and uses a similar formula for the focaccia at Pane Bianco. Mine was dry and lacked the soft sponginess of good focaccia, so while it absorbed some of the olive oil from the mayo-less tuna salad, it was too chewy and made the whole sandwich feel heavy. All five of these places appeared in Phoenix magazine’s list of the 20-odd best new restaurants of 2012.

To the east valley … if you’re going to a Cubs or Mesa Solar Sox day game, my new recommendation for a pregame meal is Urban Picnic on Main Street, less than ten minutes’ drive from the ballpark, offering a modest menu of hot (pressed, but not smashed) and cold sandwiches, made on these amazing baguettes, soft on the inside with a crust that shatters upon impact. I’ve tried two sandwiches, the mozzarella caprese and the roast beef with horseradish, both of which are outstanding, although I wish the mozzarella was fresher – it’s not quite the hard moisture-reduced stuff you get at your generic megamart, but it’s not as soft as even a good-quality cow’s-milk mozzarella is. The fruit cup you can get on the side is tiny but the fruit within has always been sweet and was obviously cut that morning. The only item I didn’t like was the fresh lavender lemonade, which was like sucking on a flower.

Pitta Souvli, located at Germann and Alma School just south of the 202’s Santan portion in Chandler, wins the prize for best Greek/Mediterranean place we’ve found so far, with everything solid but the small plates really shining. Their baba ghanoush is a powerful mixture of smoky, tart, and garlicky flavors that will have you radiating allyl methyl sulfide from your pores for days. The avgolemono – a soup made from chicken stock, lemon juice, rice, and eggs that are beaten into the hot stock to make a thick, cloudy end product – has bright lemon flavors and the thick, slightly uneven texture that the soup should have if the rice is fully cooked and the eggs are added slowly enough. Their souvlaki is a slightly mixed bag, with the meats a little overcooked for my tastes, more of a problem with the chicken (white meat, so it dries out) than with the pork. They also get points for using thick, better-quality pitas that can stand up to heat and to thick dips like the baba ghanoush and the hummus, which is topped with a bright peppery olive oil.

And finally, to Surprise, where there’s finally a good, fairly quick, non-chain option near the ballpark: Saigon Kitchen, the best Vietnamese restaurant I’ve found out here and another restaurant in Phoenix magazine’s list. I’m a little boring when it comes to Vietnamese food because I nearly always order the bun, steamed vermicelli topped with some sort of grilled, highly marinated meat, served with a sweet/savory sauce based on nam pla (a salty Asian fish sauce that’s very high in umami) along with bean sprouts, shredded vegetables, mint leaves, and sometimes peanuts. What Saigon Kitchen does differently from most places is create blocks of a highly spiced (but not spicy) pork meatloaf, as opposed to fatty slices of pork, baking the meat at a low temperature before finishing it on the flat-top to give it some color. It’s tricky to eat with chopsticks because the blocks are so large, but the added flavor and improved texture make it completely worth it. It’s busy at lunch but I haven’t seen it packed, probably because of all the competition from crappy chains next door to it on Bell Road, and the food comes pretty quickly.

Pasta alla carbonara.

I’d made pasta alla carbonara many times, using the recipe from Joy of Cooking or similar recipes that all worked primarily the same way – beat some eggs and toss the pasta in that mixture along with a little reserved pasta water, then adding the grated cheese and some cooked bacon. Even using all the right ingredients – Pecorino Romano and either pancetta or the harder-to-find guanciale – didn’t solve the basic problem of texture. No matter how quickly I moved or how carefully I managed the heat, the sauce would cook unevenly and I’d end up with some bits of sauce scrambling on the bottom of the pan.

As I tried to figure out a reason this might happen aside from user error (always a possibility in my kitchen), I had a small breakthrough while frying eggs for breakfast. The egg white cooks more or less the moment it hits the hot pan, while the cook can control the cooking of the yolk and keep it runny for quite some time. The sauce in pasta alla carbonara might have cooked too fast because I was using the wrong ratio of yolks to whites – instead of one to one, why not use more yolks and fewer whites? It turns out that it’s wrong to think of carbonara as a sauce. It’s a custard, and the texture of the finished sauce should be comparable to slightly melted gelato (itself a custard, just with a small amount of air beaten into it).

This turned out to be a one of the two major adjustments I made to the recipe while experimenting with the ratios. The other involves the pasta water. Most recipes that call for pasta water use it for its thickening power (it contains starch from the pasta itself, as well as some of the salt you added before adding the pasta), or to thin out a sauce that might otherwise be too thick. In this case, however, I decided to reserve twice as much of this water as the various recipes called for, and then used some of that to deglaze the pan in which I rendered and crisped the pancetta, imparting substantially more bacon-y flavor to the finished sauce.

Pasta alla carbonara is often served in the United States with long, thin shapes like fettuccini or spaghetti, but I prefer to go with shorter tube-shaped pastas with ridged exteriors. The tube shape allows the pasta to grab some of the smaller pieces of bacon in the sauce, and the sauce clings more easily to shapes with ridged exteriors, like penne or rigatoni. You can use whatever kind you like, of course, but I do think the shape and the sauce need to work together, and long, smooth shapes just leave too much sauce at the bottom of the bowl.

So, the summary:
* Use more yolks and fewer whole eggs
* Use real pancetta (or the similar guanciale) and Pecorino Romano
* Deglaze the bacon pan with pasta water
* Choose the right pasta shape
* Work quickly once you begin constructing the sauce in the pasta pot
* Don’t add anything else – that means no cream, no butter, no chicken, no vegetables, nothing. The sauce is the star and this is a one-man show.

And, finally, I don’t want to hear about how unhealthful this dish is. I’m not suggesting you make this every night. This is peasant food for the soul.

½ pound penne, rigatoni, or similar shape
3 egg yolks
1 whole egg
¾ cup Pecorino Romano cheese, finely grated
About 75 grams of pancetta or guanciale, finely chopped for rendering (this was about 3 thick slices for me)
Salt and freshly ground black pepper

Hardware: Pasta pot, saute pan, tempered glass measuring cup, strainer, long-handled wooden spoon or heatproof plastic tongs

1. Render the bacon in the saute pan. I prefer the method from the indispensable Ruhlman’s Twenty, in which you just barely cover the meat with water in the pan, put the lid on, and heat it on high until the water’s gone, reducing the heat as the bacon sizzles and browns. You can do this as you cook the pasta as long as the pancetta is done ahead of time. Drain and reserve the rendered fat, and reserve the meat, but do not clean the pan.
2. Cook the pasta according to the package directions, making sure to use plenty of water and salt it aggressively before adding the pasta.
3. Beat the eggs together until homogenous.
4. Here’s where things speed up.
a) When the pasta is just barely al dente, use the measuring cup to remove a cup of the pasta water. Use ¼ to ½ cup to deglaze the hot saute pan, scraping the bottom to clean it. Hold this water in the pan for now; it can simmer but don’t let it boil.
b) Drain the pasta and return it to the pot, off heat, tossing with enough of the bacon fat to just barely coat the pasta and keep it from sticking together.
c) Add the eggs to the pasta along with the deglazing liquid and stir or toss aggressively. Don’t let the sauce sit at the bottom of the pan. You want this to get warm, about 160 degrees F, but never hot.
d) Once the pasta is coated and the egg/water sauce is warm, add ½ cup of the cheese and toss. Then add the bacon, toss again, and season with freshly ground black pepper. Serve with the remaining cheese as an optional garnish.

The remaining pasta water has two purposes. One is to thin the sauce in the pot if it’s looking too thick. The other is to thin the sauce if it’s been sitting for a few minutes before anyone can get a second helping; this sauce thickens (or maybe just contracts) as it cools.

Osteria Mozza.

I had dinner on Friday night at Osteria Mozza, one of the most popular and famous restaurants in Los Angeles at the moment, joined by my friend and colleague Molly Knight, a known cheese enthusiast and a veteran diner at Mozza. The restaurant is the brainchild of three luminaries in American food, including Mario Batali, who likely needs no introduction. The primary force behind the restaurant and its neighbor, Pizzeria Mozza (next visit!), is Nancy Silverton, co-founder of the legendary La Brea Bakery as well as of Campanile restaurant, where she previously served as pastry chef. The third partner, Joseph Bastianich, is a vintner, restaurateur, and son of Lidia Bastianich, the matron of Italian-American cooking. Names like these don’t always guarantee success, of course, but in this case, the restaurant lives up to its pedigree. Everything we had was outstanding; I would say some dishes were more outstanding than others, but nothing we ordered was less than plus.

The server said the menus are updated daily, so there are no off-menu specials. We went with two starters, two primi (pastas), and one secondo (main), plus a dessert and two beers. I believe it’s the most expensive meal I’ve ever paid for myself, just barely surpassing Craftsteak. The wine list looked extensive, as you’d expect given Bastianich’s involvement, but as I can’t drink red wine and couldn’t see white standing up to the duck ragù I went for the smaller beer list instead.

For starters, Molly humored me by letting me order the testina con salsa gribiche, better known in English by the unfortunate moniker “head cheese.” It’s not actually cheese, but is a terrine or aspic made by simmering the cleaned head of a pig (or sometimes cow) so the remaining the cheek and jowl meat ends up set in a gelatin from all of the connective tissue that surrounds it. The resulting terrine can be sliced and served cold, but Mozza slices it thickly, breads one side, and pan-fries it, serving it with a sauce gribiche, an emulsion of egg yolks and mustard to which one adds capers, chopped pickles, and herbs. (One might compare this dish, then, to a hot dog with mustard and relish, but I wouldn’t want to be so crass about it.) The result is very rich, with the strongly-flavored meat surrounded in luxurious gelatin that produces a fat-like mouth feel, while I left thinking I really need to use sauce gribiche a lot more often at home. The pan-frying, by the way, gets rid of the one real objection you might have to head cheese – the stuff looks like the result of some sort of processing accident.

You could build an entire meal just from Mozza’s selection of starters based around fresh mozzarella without getting bored, but we both zeroed in on the burrata (fresh mozzarella wrapped around a suspension of mozzarella bits in cream) with bacon, marinated escarole and caramelized shallots, which I think was my favorite item of the night. The saltiness and smokiness of the bacon, the acidity of the marinated escarole, and the sharp sweetness of the shallots were all beautifully balanced and gave depth to compliment the creamy texture of the cheese, which, while extremely fresh (of course), was mild in flavor.

I would have probably told you before Friday night that I wasn’t a big fan of potato gnocchi, but apparently I’d just never had a truly great rendition prior to tasting Mozza’s gnocchi with duck ragù, a dish we ordered primarily because I’ll eat just about any dish with duck in it. The ragù was strong, with deep earthly flavors and small chunks of tender breast meat, but played a clear second fiddle to those little pillows of love, lighter than any potato gnocchi I’d previously tried. It’s the kind of meat-and-potatoes dish I could stand behind.

Molly ordered one of her favorite primi, the goat cheese ravioli with five lilies sauce. The pasta was as thin as I’ve ever come across in ravioli, but with good tooth thanks to strong gluten development, wrapped around a thin layer of assertive chevre-style goat cheese; those thin wrappers produce a much better pasta/filling ratio than you typically get from filled pastas. The “five lilies” sauce refers to five members of the allium family – garlic, onion, chives, scallions, and leeks – which stands up well to the tangy goat cheese.

We went with one main, the short rib braised in Barolo wine and served over a very soft, creamy polenta. I’ve never met a short rib dish I didn’t like, and the braise was perfect, producing a rib that stands up on the plate but pulls apart with no effort. If I was to criticize anything we had all night, it might be that the exterior of the short rib was on the soft side, so it might not have been seared that much (it was definitely seared at some point) before the braise. But the criticism is a bit absurd, as the dish was still a 70.

For dessert, we went with the house-made gelato, mint chip and coffee side-by-side with a giant pizzelle with a faint anise flavor. The texture was perfectly smooth, no hint of ice crystals or of extra overrun; the coffee was a little sweeter than I like my coffee ice creams (but I admit I like coffee and chocolate ice creams to be as dark as possible), while the mint chip surprised with real mint flavor – not like an extract, but like actual mint leaves, brighter, fresher, and less harsh than your typical mint-flavored ice creams. (Plus, it wasn’t green.)

We sat at one of the two bars in Osteria Mozza and, at 7 pm on a Friday, didn’t have to wait to be seated, but there were no regular tables available before 10:30 pm at that point. (I actually love sitting at the bar in restaurants, alone or with a friend; you’re rarely forgotten by your server and you often get to see a lot of what’s going on in the kitchen, or at least what’s coming out of it.) The prices are not for the faint of heart, but as I said to Molly when we left, this wasn’t so much dinner but an experience, the kind of meal you might only have a few times in your life, but one you’ll think about for weeks afterwards.

Macaroni & Cheese with Gruyère and Thyme.

Before I get to the recipe, I wanted to point out that Amazon.com is selling a one-year subscription to ESPN the Magazine for $5 this week. I believe that this will also get you a year of Insider.

This is my reboot of this recipe; since I can’t abide cheddar cheese, I decided to make it with Gruyère, a milder cheese that’s also one of the best melting cheeses I’ve ever used.

Gruyère also happens to be the classic cheese at the heart of a sauce mornay, and mac and cheese is little more than cooked pasta covered in a sauce mornay with extra cheese and baked till semi-firm and golden brown on down. A sauce mornay is built on a sauce Béchamel*, one of the “mother sauces” and a somewhat secret ingredient in dishes like lasagna. A Béchamel starts with a flour-butter roux to which one adds milk (the traditional method is to steep an onion studded with a bay leaf and a few cloves in the milk first) and then simmers very gently until thickened. Add Gruyère and Parmiggiano-Reggiano to a Béchamel and you have a mornay.

*So one of the Food and Wine pavilions at Epcot this year had some dish served in a Béchamel sauce, and while I was walking by, I overheard a female tourist from somewhere in the northeast yell to her family that the dish was in a “buh-KAM-el” sauce. Granted, not everyone knows what a Béchamel is or how to say it, but if you saw that word and didn’t know it, how far down the list of potential pronunciations would “buh-KAM-el” be? Twentieth? Eightieth? A hundred and twelfth?

Since Gruyère is a French and Swiss-French cheese I went for one of the Frenchiest herbs I could think of, thyme, which pairs very well with Gruyère, and added parsley for some background music. Tarragon is probably the other herb I most associate with French cooking, but it’s too assertive for this dish in my opinion, and it’s more of a spring herb than a fall/winter comfort food flavor. Chives might work. I guess what I’m saying is that you can and should play with the herbs in this dish, just bearing in mind that the cheese flavor is on the soft side and you don’t want the finished product to taste like grass or licorice.

I’ve tried the dish with and without bread crumbs in the topping and I prefer it without, but it’s just a matter of taste. I also cut the mustard (!) in half to keep it in the background; it’s also a very French flavor but not everyone likes a mustardy smack in the mouth.

Whole Foods has organic whole wheat elbows under the 365 label for $1.99. I found a Swiss Gruyère at Trader Joes for $9.99 a pound; a roughly 10-11 ounce brick should give you enough for two batches.

1 1/2 cups elbow-shaped pasta (whole wheat works fine; you can try other shapes but it may alter the cooking time in the oven)
3 T unsalted butter
3 T all-purpose flour
1/2 tsp dry mustard
2 cups milk, anything but skim
1 1/2 tsp chopped fresh thyme
1 Tbsp chopped fresh flat-leaf parsley
1 1/2 cups (about 5 ounces) grated Gruyère cheese (nothing too fancy like “cave aged for 20 years” or anything)
1/2 cup + 2 Tbsp Parmiggiano-Reggiano
salt/pepper to tastes

1. Preheat the oven to 350 degrees.
2. In a saucier (if you have one) or deep skillet or sauté pan, melt the butter and allow to foam but not brown. Add the flour and whisk constantly until a small paste forms. Add the mustard.
3. Gradually add the milk (you may choose to heat it first for faster cooking), still whisking constantly to create a smooth liquid.
4. Allow the mixture to simmer gently for 5-7 minutes until it’s visibly thickened and coats the back of a spoon. Add the herbs, then begin adding the Gruyère in small handfuls, whisking each addition into the sauce until it’s fully integrated. (If you add it all at once and whisk, you will end up with a big congealed clump in the center of your whisk – a hot mess if ever there was one.) Add 1/2 cup of the Parmiggiano-Reggiano and kill the heat. Season to taste with salt and pepper (white pepper works well here for aesthetic reasons).
5. Cook the pasta in several quarts of salted water and drain. You don’t want the pasta sitting and waiting for the sauce, so I usually put a small pot of water on high heat when I start the roux.
6. Grease a casserole dish and add the pasta. Pour the sauce over the pasta and toss to coat. Spread the remaining Parmiggiano-Reggiano over the top and bake until the top is golden, brown, and delicious and the center is slightly firm, 20-25 minutes, 30 if you want to be able to cut firm, stable wedges of the dish.

UPDATE: Reader Steve asked about adding leeks and/or bacon. I haven’t tried this variation, but here’s how I’d approach it:
* Chop the bacon finely and crisp in a skillet, rendering out as much fat as possible. Remove the bacon to a paper towel, then add to the casserole right before it goes in the oven.
* Pour out all but maybe 1 Tbsp of the fat from the skillet and use that to sweat the leeks. Slightly browning them is optional but would add more flavor – just don’t burn them. Add with the bacon to the mix right before baking.

Roasted Red Pepper Pesto.

Most people associate “pesto” with basil pesto, also known as pesto Genovese, a mixture of basil, Parmiggiano-Reggiano, garlic, pine nuts, and olive oil. The term “pesto” just means “smashed” or “beaten,” and can refer to any sauce made from pureed ingredients in an emulsion with oil. On my last trip to Italy nine years ago, my wife had pasta with olive pesto in a little restaurant in Assisi, and liked it so much that we went back the next night so she could have it again. My personal favorite non-basil pesto is one with roasted red peppers.

This is ridiculously easy to make if you just want to use jarred roasted red peppers, although roasting your own is easy – do it on a grill or in a 400 degree oven until the skin of the pepper is charred (not burned to ash), then let it rest in a bowl with foil covering it for ten minutes, then peel the skin off. To use them for this recipe, make sure the peppers have no seeds or rib meat remaining.

1 roasted red pepper
1 clove garlic, pressed or chopped
3 Tbsp pecorino romano cheese, grated
3-4 Tbsp extra-virgin olive oil
pinch salt, pepper, crushed dried chili pepper (optional)

Puree the first three ingredients, then gradually add the olive oil while continuing to puree to form an emulsion. Season with salt, pepper, and red pepper as desired. Serve over pasta (with grilled chicken, if you like) or use in place of tomato sauce on pizza.
