Raleigh-Durham eats, 2025 edition.

I had one of the best meals of my life in Raleigh last week, so much so that I opened up my Notes app and started writing down every restaurant that made me say the same thing, ending up with about 15 of them (which will eventually become a post here) of which I could remember the names and the meals. This dinner came at Figulina, an Italian restaurant that focuses on fresh pastas and a lot of traditional ingredients, while the recipes run the gamut from the very traditional (a straight pasta alla carbonara with guanciale, the ideal cured pork for that dish) to the modern. Chef-owner David Ellis was previously chef de cuisine at Ashley Christensen’s Poole’s Diner, located just a few blocks away. Every single thing I ate was superb, the cocktails were also outstanding, and the service was just exemplary across the board. I even thought about going back a second time on this trip to try more things before I realized that was a little silly and also I didn’t have time.

I ordered a little out of my usual comfort zone because I figured this was a rare chance to try some things I don’t eat often or even see much on menus. For a starter, I had the salt cod tartine, and if you gave me two of those it would be the most divine and complete lunch. I like baccalà, the dried salt cod pioneered by Basque sailors and still popular across southern Europe, although I had to acquire the taste. This dish mixes the salt cod, which is rinsed and prepared to remove the preserving salt and reduce the fishiness of the flavor, with artichoke leaves, parsley, onion, some extremely good olive oil, and a light touch of vinegar and serves the combination on a thick slice of crusty bread from nearby Boulted Bread. It was bright and balanced, with the cod present in the flavor but not overwhelming with its saltiness. I’ve had salt cod a few ways, but never like this, and actually never in a cold preparation that I liked.

For my main, I had the cappelletti with gorgonzola dolce, served with walnut pesto, fig mostarda, and fresh rosemary. I don’t care for blue cheese in general, not on principle but because I have never become accustomed to the signature flavor of those cheeses, which my palate (and my nose) will forever interpret as “spoiled.” My bartender assured me that the filling of their pasta was a mixture of house-made ricotta and gorgonzola dolce, and that the blue cheese flavor is subtle because there is so much else going on in the dish. (I also knew that if I was ever going to like or tolerate a blue cheese, it was probably gorgonzola dolce; dolce means sweet, and this cheese is aged far less than most blue cheeses, so it’s nowhere near as pungent.) I took the leap of faith and followed his advice to try to get every element in each bite – one of the little hats of pasta, a good bit of the walnut sauce, and some of the dollops of fig mostarda. He was right about everything; I’m struggling to describe the overall flavor because it contained such a broad array of different flavors and notes that worked together so that, no, you don’t get a big hit of blue cheese or of the vinegar in the mostarda. The best comparison I can offer is the perfect cheese board, where you pair a creamy young cheese with a fruit paste and some toasted nuts, but with the glory of fresh pasta involved too. And rosemary. Their menu changes often but I hope this one sticks around for the season.

I have largely been skipping dessert while traveling because I just don’t need it or even crave it like I used to, but given how good the first two items were, I had to give it a look. They had three desserts, one of which held no interest for me and the other contained an ingredient that I’ve had an allergic reaction to twice (although I’m not sure it was the culprit), so I settled on the Bakewell tart, a very not-Italian dessert that I only know because my wife has made it a few times. Figulina’s version was traditional, and rich, so much so that I had just half and … uh … had the rest with lunch the next day. I think it was less sweet than others I’ve had, but I’ve found that’s typical in a lot of fine-dining desserts.

Then there were the cocktails … I told the bartender that I enjoy a Negroni, but that I saw they had an extensive collection of amari (potable bitters, like Montenegro and Cynar), so would he be interested in concocting a negroni-like drink for me? I’ve done this now and then at bars and always get a good response, plus I get to try new things. He did, and it was good … but the better drink was their Escape from Manhattan, containing barrel-aged Conniption gin, Mancino rosso sweet vermouth, and Cardamaro. Cardamaro is a cardoon-based amaro, similar to Cynar but less artichokey; the Conniption gin is 94 proof and is aged ten months in bourbon barrels, although to be honest I’m not sure that last bit is a good thing in gin. Anyway, it was sort of a cross between a Negroni and a Manhattan, but better, less sweet than either drink, with some nice bitter notes and a strong base of herbal flavors. (I’m pretty sure he used Cardamaro in the Negroni riff he made for me as well.)

Anything beyond that will probably seem a bit anticlimactic, I suppose. The second-best meal I had was actually tacos from a gas station in Cary – Taqueria La Esquina, which runs a decent-sized kitchen in a Shell station. I tried their pork al pastor and chicken, which both come with cilantro and grilled onions, with the pork the better of the two; both were good but the chicken was a little dry, while the pork retained its moisture and generally had more flavor to it, although neither was spicy at all. Their menu runs a little heavy on red meat, so it’s not ideal for me (I don’t eat beef at all).

I found them because they were just up the street from Milos, a little coffee shop that has just ordinary espresso drinks with Illy beans but offers single-origin pour-overs from different roasters. I’m still a big fan of Jubala over in Raleigh, but Milos is closer to the USA Baseball Complex, which is often where I’m headed anyway.

Located right in downtown Durham, Bar Virgile does classic cocktails and a simple gastropub menu. They do a classic daiquiri, just rum, lime, and simple syrup, which isn’t hard to make but which I think has lost its luster because of fruity, blended nonsense that has appropriated the name. Hemingway liked them, and I don’t think he was sitting poolside with a giant glass of slushy mango juice and rum. Anyway, I don’t know why I ordered fish and chips when I was kind of feeling like getting something light, but it was the right choice – Bar Virgile’s version has just a light breading, and the cod could not have been more perfectly cooked, enough so that I ended up eating most of it with a fork because I couldn’t pick it up. I was having dinner with my friend from middle school, and after we went across the foyer to their cocktail bar, Annexe, where I had a drink called the Lazy Monk that was clearly their twist on a Last Word, using gin, génépy, Luxardo maraschino, lime, and a rosemary-thyme simple syrup. With green Chartreuse becoming hard to find, everyone’s looking for alternatives – Luxardo has one called Del Santo that gets good reviews from folks who use it in a Last Word – and this was a great twist, with the syrup bringing herbal notes to the front but not enough to throw off the drink and make it too sweet. It’s not a Last Word, which is one of my favorite cocktails ever, but it’s damn good. I got to Durham a little early after an aborted attempt to go to Blacksburg (the game was rained out about 90 minutes into my drive), and parked at Yonder Coffee, located inside The Daily, to have some tea and sit for a little bit. They have a credible selection of teas available, including hojicha, my favorite green tea – the leaves are roasted, so it’s less grassy than most green teas.

I tried Big Dom’s Bagel Shop, which is only open Wednesday through Sunday, and then only until they sell out. The everything bagel was covered with seeds and salt, and it had the right consistency in the center and enough chew to the crust. I ordered an egg sandwich, and the eggs came in one of those pre-cooked blocks of scrambled eggs, which, fine, I’m here for the bagels, but I feel like a good bagel deserves better than that.

One Blacksburg restaurant to mention – Café Mekong, a pan-Asian spot in a strip mall a little south of downtown. They clearly do a thriving take-out business, although their handful of tables were full the whole time I was there. The papaya salad was standard-issue, just average, but their Singapore noodles were a 55.

  • Republicans in North Carolina continue their legal fight to steal a state Supreme Court seat, arguing that the right to vote is not absolute as they try to invalidate over 65,000 votes.
  • Mathematicians solved another century-old puzzle, this one on whether you can divide a triangle into fewer than four pieces and assemble those into a square. The answer is that you can’t – four is the lowest number.

Outer Banks eats.

We spent last week in the small town of Corolla, North Carolina, at the northern tip of the Outer Banks – beyond Corolla, there are houses, but the roads aren’t paved, and you may wake up to find a wild horse hanging out in your yard. It’s very quiet, which was wonderful, but also has enough amenities that we could get whatever we needed, which also meant we could cook in the house we rented or head out to eat. So while this is probably the most obscure place for which I’ve ever written up restaurants, here’s the rundown of everything we ate on the trip.

There were two restaurants I’d recommend regardless of where they were – they weren’t just Corolla good, but legitimately good. Mama Easley’s is a fried seafood place with a solid beer selection, and the seafood was superb across the board. We were down there with another family of four, so I got to try a little of everything – the fried shrimp were the best item, but everything was fried perfectly, with no excess oil anywhere. The French fries were too spicy for the kids, with something Old Bay-like but without that odd stale flavor of actual Old Bay (sorry, Marylanders, I just think it’s overrated), while the hush puppies were a hit. My wife got the grilled bay scallops, the one non-fried item we had, and they were cooked just the way I like them, which is just the hotter side of rare – I know scallops are usually just seared so that the center is still slightly translucent, but I like it pushed a touch farther than that so they’re hot through but still tender. I ate way too much fried stuff that night, and drank a local beer (I don’t remember what sort), so I didn’t exactly feel great the next morning, but I have no regrets.

Agave Roja was the other big hit, a Mexican restaurant in a strip mall (across from the Food Lion) that goes upscale from typical Mexican restaurants in that area. We ordered take-out, so we probably missed out on a little of the experience, getting four different types of tacos – fried shrimp, fried fish, carne asada, and pollo asado. I skipped the steak, but the other three were all excellent and the shrimp was not spicy despite what was supposedly a mango-habanero salsa and chipotle aioli. The fish and shrimp came on flour tortillas, while the other two came on corn; the latter should have been doubled as they fell apart almost immediately. There was a ton of flavor on all of the tacos, both in the protein and the various toppings, although I’m not sure what was listed on the menu was exactly what we got on top of each taco.

I grabbed lunch one day at Sooey’s, a barbecue spot in the same strip mall as Agave Roja, and it was perfectly average BBQ. I got a half-rack of ribs, which the host said was her favorite item on the menu, and some collard greens and fried okra, because I was in the south and I love both of those things. The ribs were smoked properly, with a visible ring and the meat coming free from the bone, and had enough flavor on their own that they didn’t need the sauce (which was not that interesting anyway). The collards were the best item of the three, while the okra needed more salt.

We tried two pizza places in Corolla, with Corolla Pizza (located at the northern edge of town) the better of the two; it’s pretty close to New York City pizza but the crust needed to be cooked just a little more, as it had zero color on the under side. Giant Slice’s pizza was cooked more, but the toppings were nowhere near the same quality and the sauce was too sweet.

For coffee, I would suggest seeking out The Kind Cup, which is in Corolla Village, the closest thing there is to a town center here, and a short walk from the lighthouse and museum. The Kind Cup roasts their own coffee to a variety of levels, with a medium-roast for their espresso; I was a little bummed that they didn’t have any light roast on drip or for sale as whole bean that particular day, as they do roast and sell some single origins. The building is also a small art gallery and craft shop, and it’s across the street from a modest, well-curated bookshop called The Island Bookstore. I also tried the coffee and gelato at Doppio, with the gelato very good (I had the dark chocolate) and the coffee darker than I like it. Our friends got a bunch of pastries from Northern Lights Bakery & Coffee; I don’t even usually like sticky buns, but theirs was outstanding. Apparently there’s a line out the door most mornings within an hour of them opening, according to the locals.

Beyond food, Flying Smiles Kites is in the same shopping center as Northern Lights, and they sell an impressive selection of board games – they had Trio, Castles of Burgundy, Scout, Carcassonne, and more beyond the games you’d find at Target. We ended up buying a kite … and, most fittingly, they also had the real-time game Kites in stock. They do ship games, too, so if you wanted to pick up Trio from a friendly local game shop, it’s here.

I’m on PTO from the Athletic this week and next, so there won’t be any new content from me over there until the week of August 26th. I had some plans to hit a Blue Rocks game last week, before my PTO, but 2+ inches of rain in our area scotched that (although they did play on one of those days, which flabbergasted me because that field doesn’t drain well). I was on the road a ton this week – something like 23 hours in the car in the last five days – so I don’t have as many links as usual, either.

I’ve got a review filed to Paste for Rock Hard 1977, the board game designed by Runaways bassist Jackie Fox (Fuchs) that was also my #1 new game from Gen Con this year.

  • The chief of police in Millersville, Tennessee, is under investigation by the state for all kinds of malfeasance, and when Channel 5’s Phil Williams spoke to him, the chief called Williams a pedophile.
  • These weirdos’ attacks on Vice-President Harris for not having kids will only backfire on them, writes Jess Grose of the NY Times. I think it already has, to some extent.

One piece for subscribers to the Athletic this past week, wrapping up some minor league games I went to over the past week, including notes on Orioles, Rangers, Phillies, and Pirates prospects. Oddly enough, there’s nothing worth going to this holiday weekend, even though I’m home and available. I’m working up the top 100 draft prospects instead, and then will write my next mock, both to run in the Tuesday-Thursday window. It’s a fantastic piece of writing.
  • The Guardian’s Marina Hyde turns her wicked wit on the morbid Tories in the wake of their electoral defeat. Few writers are as deft with the language, or as willing to deploy their extensive vocabularies, as Hyde is: “Farage is the horror version of Inside Out, where Mendacity is only just holding off Racism at the control console.”

  • Longreads first: ProPublica has the story of a mom in Texas who won election to her school board in Granbury on a platform of stopping left-wing indoctrination, only to find that none of that was happening. When she went public with her change of views, however, she found herself attacked by her former allies.
  • Is Mexico City about to run out of fresh water? Maybe not yet, but the situation is dire there and in many other large cities that have overdeveloped and/or relied too much on a single water source, with climate change exacerbating the situation on multiple continents.
  • I tweeted this link when the story ran, but it’s worth reposting: Jackson County legislator DaRon McGee (D) helped put the Chiefs/Royals stadium tax initiative on the ballot. He also hit up the Royals for free suite tickets last year while he was involved in negotiations with the club.
  • St. Petersburg, Florida, is banking on 7% annual growth to help pay for the stadium they want to build for the Rays, which is wildly optimistic in any circumstances, but I’d say even more so for a city right on the water in an era of rising sea levels.

  • Longreads first: Judd Blevins is a white nationalist. The town of Enid, Oklahoma, voted him on to their city council, but there’s a fight brewing now to remove him. Blevins refuses to address his history with Identity Evropa, a major white nationalist organization, instead hiding behind “God” and religion.
  • Oregon moved to recriminalize possession of hard drugs, notably fentanyl and heroin, three years after decriminalizing it. Note that several quotes here are from Republican representatives talking about fentanyl (a popular GOP talking point) and Portland (which they do not represent).
  • This year’s FAFSA roll-out and the new rules that led to the changes in the federal student-aid forms have all been a huge disaster that may force some schools to delay enrollment deadlines.
  • Allowing kids to get the measles, the mumps, or rubella just to satisfy some lunatic’s political goals is needlessly cruel, but the cruelty is the point, isn’t it?
  • Medici is one of Reiner Knizia’s most acclaimed games, part of his so-called Auction Trilogy with Ra and Modern Art, but it’s been out of print for several years now. Steamforged announced they’re taking pre-orders for a new edition coming out this year.
