Top 25 restaurants in Philly for 2019.

I’ve wanted to put this post together for ages, but wanted also to be sure I’d tried enough restaurants in the city for my list to make some sense. I think I’ve done that now, although there’s always more to try, and living a bit outside the city I’m at a slight disadvantage.

1. High Street on Market (Old City). My favorite spot in the city for breakfast or lunch, and they do dinner as well, although it’s the one meal I haven’t eaten there. The menus are built around their amazing, old-world breads; the breakfast Forager sandwich is to die for, and they make the best roast pork sandwich in the city. Their sister restaurant, Fork, is also on the list.

2. Suraya (Fishtown). Recently named the #1 restaurant in the city by Philly magazine, this all-day Lebanese restaurant, with a café/market in front and fine-ish dining in back, does Levantine cooking right, with classic preparations of the mezze (small starters, like hummus and muhammara) served with piping-hot pitas. There are a few non-traditional items here too, but go with a gang and stuff yourselves with a bunch of mezze.

3. Vedge (Midtown Village). A vegan restaurant to satisfy almost any omnivore; they do incredible things with vegetables so that the dishes are satisfying and visually stunning, and so you won’t think about the absence of meat. I still can’t believe the sunchoke bisque amuse bouche didn’t have dairy in it, and the toasted marshmallows in my dessert were indistinguishable from those made with egg whites.

4. Bud & Marilyn’s (Midtown Village). Marcie Tunney’s best-rated restaurant does American comfort food with upscale twists, including various fried chicken dishes and outstanding salads – I’ve recreated a fennel, brussels sprout, and green apple salad I had there in December 2017 a dozen times at home.

5. Cheu (Fishtown). I’d say “best ramen in Philly” but I haven’t had it many places. They do make great ramen, and have great cocktails. It’s near Suraya; parking is a pain on that whole stretch.

6. Hungry Pigeon (Queen Village). My birthday dinner last year was here, and we ordered a strange assortment of dishes, but everything was excellent (well, my daughter might disagree on the asparagus). They use fresh pasta from the Little Noodle Pasta Company, a spinoff of the now-closed Ela in the same neighborhood. The dessert, a ‘diner-style’ coconut cream cake, was four large portions by our standards.

7. Fork (Old City). High Street’s sister and neighbor does superb fine dining in a quieter, more upscale atmosphere, with a great wine/cocktail list.

8. Abe Fisher (Rittenhouse). I haven’t been to Zahav, Michael Solomonov’s flagship restaurant, but I’ve been here, which is still on the high end but more affordable and I think a bit more accessible. The menu is inspired by but not limited to Jewish-American cooking traditions. The gougères they serve instead of a bread basket are superb, and my daughter will tell you it’s the best Shirley Temple in the city.

9. Osteria (Fairmount). Osteria was a Marc Vetri restaurant, included in the sale of most of Vetri’s portfolio to Urban Outfitters, then purchased last year by the owners of Sampan and Double Knot. Most of their signature dishes, including house-made pastas and pizzas, are still on the menu, including the chicken liver rigatoni that my daughter once described as “it sounds gross, but it’s really good.” (She was 8.)

10. Royal Boucherie (Old City). Top Chef winner Nicholas Elmi’s second restaurant in Philly – I haven’t been to Laurel – is an “American brasserie” with a lot of French influence on the menu and a very lively bar. Their desserts are superb and they have one of the best lists of amari (potable bitters) I’ve come across.

11. Pizzeria Vetri (Arts District & Rittenhouse). I’ve only been to the original location, going many, many times since it first opened, and they do a small list of Neapolitan pizza options very well, as long as their signature rotolo, pizza dough rolled like a buche de noel with mortadella, cheese, and pistachios; as well as light, house-made soft-serve ice cream. Service here has always been excellent for a fast-casual spot.

12. Brigantessa (East Passyunk). Pizzas and house-made pastas from southern Italian peasant food traditions. They did have an issue last fall that resulted in the firing of their chef de cuisine, later than they should have, over anti-Semitic comments and mistreatment of staff.

13. Le Virtu (East Passyunk). Abruzzese cuisine – that’s east central Italy – which contains many dishes and ingredients you’d recognize as “Italian” but sometimes in different combinations. It’s a region I associate especially with mushrooms and that was indeed the pasta dish that most stood out to me when I ate there last month.

14. V Street (Rittenhouse). Vedge’s ‘vegan street food’ offshoot; the fried tofu taco with two slaws manages to deliver the satisfying crunch of a fish taco and make me forget I’m eating tofu, a food that I’ll consume but would rarely describe as memorable. I wish they were open more hours.

15. Royal Izakaya (Queen Village). An izakaya that takes its sake and shochu very seriously, with an intimidating menu of small plates to go along with the booze.

16. Amis (Washington Square). Another former Vetri outpost, amis focuses on the cuisines of Rome and the surrounding Lazio region in a quirky converted warehouse-like setting. When I went, I had two specials, both involving duck, that were superb.

17. Pizzeria Stella (Society Hill). A Stephen Starr outpost very close to I-95 and the waterfront, Stella does traditional Neapolitan-style pizzas with a few pasta and starter options and home-made gelato for dessert.

18. Barbuzzo (Midtown Village). Marcie Tunney’s flagship, still known for great pasta dishes (the ricotta gnocchi are superb), good pizzas, seasonal vegetable dishes, and that salted caramel budino.

19. Stock (Fishtown/Rittenhouse). A BYOB with two locations – I’ve only been to Fishtown – that serves the best banh mi I’ve had here, as well as southeast Asian soups and cold noodle dishes.

20. Dinic’s (Reading Terminal Market). This is where you go if you want a very classic Philly roast pork sandwich (with sharp provolone and broccoli rabe, please). They do other sandwiches I don’t eat, but why bother?

21. Poi Dog (Rittenhouse). If you want poke, this is your place. They have spam musubi too if that’s how you roll.

22. Dizengoff (Rittenhouse Square). Solomonov’s hummus outpost, with shakshuka on the weekends, will often have a line out the door. His Federal Donuts is across the street but I don’t care for their donuts and haven’t tried their Korean fried chicken.

23. Lolita (Midtown Village). Marcie Tunney’s upscale Mexican spot has great margaritas, tacos, taquizas, enchiladas, and a few fun sides like elote and maduros.

24. El Vez (Midtown Village). Stephen Starr’s straightforward Mexican spot with a large menu of guacamole options and very good if predictable American-Mexican food.

25. Farmicia (Old City). Farm-to-table food with a wide menu that I find great if you don’t know if your fellow diners are adventurous eaters, since they offer plenty of accessible options plus some quirky dishes for the more daring eaters.

I still haven’t made it to Zahav; I’ve twice had reservations and had to cancel, once for work (still mad), once because of illness. I’ve been to Double Knot, but only for happy hour, which is a different menu than dinner but still very good. I haven’t been to Laurel, Friday Saturday Sunday, Noord eetcafe, or Serpico. I can’t eat at South Philly Barbacoa, and I’m not paying what Vetri Cucina is asking.

Places I’ve tried and didn’t like: Vernick Food & Drink (they sent out a dish that was actually burned, enough that I sent it back, which I almost never do), Res Ipsa (ordered a hot sandwich that arrived cold), Sate Kampar (spicy food, but not flavorful at all).

Finally, for coffee, Re-Animator is my favorite roaster in Philly, with Elixr second. I love the Menagerie coffee shop across the street from Farmicia, where they use Dogwood espresso and a few third-wave roasters from around the country for pourovers.

Los Angeles eats, 2017 edition.

This isn’t ideal, writing up food from a trip I finished two weeks ago, but given everything that happened between the end of that trip and today, it’s the best I can offer. Fortunately I ate some memorable stuff.

The best meal I ate was at P.Y.T., a new ‘vegetable-forward’ restaurant right in downtown Los Angeles, not entirely vegetarian but mostly so, with only two real meat-centric dishes and plenty of options that were vegetarian or even vegan. I am not a vegetarian, as regular readers know, but I have curtailed a lot of my consumption of red meat for health reasons (because I don’t metabolize the amino acid leucine properly and because my cholesterol is the highest it’s ever been) and I actively seek out vegetables when eating on the road. I ate a completely vegetarian meal at P.Y.T. and was totally satisfied and still full afterwards, because the dishes managed to be decadent without being heavy.

I had three plates at P.Y.T., which does mostly smaller plates but without going to tiny portions. The baby beets salad with mandarin segments, arugula, pumpkin seeds, and coconut labneh (like Greek yogurt, but Lebanese) was light and offered an unusual combination of flavors that worked well even if I didn’t get everything into each bite; the citrus + beets combo is pretty classic, but the arugula leaves were too mature and kind of tough. I’ll definitely try to replicate that coconut labneh at home at some point. The hand-torn pasta with green garlic cream, shishito peppers, cilantro, and mint was the most unique pasta dish I’ve ever tried, very green (obviously) but bringing together flavors I’ve never had with pasta; it was intermittently spicy, and I suspect there may have been a little jalapeno in there, and it was properly sauced (not drowning in it, not dry). If there was heavy cream in the dish, it was scant, which is a positive – too much and suddenly you’re at Olive Garden (and not even family). The dessert was a peanut butter mousse by another name, with chocolate wafers crumbled on top of alternating layers of whipped cream and the mousse. If that had had just one little layer of dark chocolate it would have been an 80.

I went to Son of a Gun for lunch, and tweeted the picture of their enormous fried chicken sandwich, which I split with a friend. It’s right up there with the Crack Shack (San Diego/Encinitas) and nocawich (Tempe) for fried chicken sandwiches, and it might have had the crispiest shell around the meat of any I’ve ever had. We also got the lobster rolls, which are basically two bites big, and the garlic fries, of which I ate way too much, and I seem to remember a salad of apples and cheese that I thought was just fair. The chicken sandwich, though … I still think it’s a two people per sandwich choice, but it’s double-plus.

The Son of a Gun team – owners of Animal and Jon & Vinny’s – co-own Petit Trois, an offshoot of their fine-dining place Trois Mec, but this one is run by chef Ludo Lefebvre, who was actually in the restaurant in his chef’s whites the night I ate there. It’s lighter fare, still Parisian French but more like French bar food than classic French gastronomy. The best item I had was their English pea tartine, which had English peas over honeyed chevre spread on a thick, grilled slice of crusty bread. The peas just made the dish, of course, since they were at peak sweetness. I also had butter-poached shrimp served in avocado, which was fine but probably fussier than it needed to be; and the “beignet,” which I would just call a donut but what do I know.

Both Petit Trois and Sqirl showed up on Eater’s list of the best 38 restaurants in America for 2017 – I’ve been to ten, plus Publican’s offshoot PQM – and while I totally get Petit Trois’ place, Sqirl … I think it’s more about a novel concept than anything else. It’s a breakfast and lunch spot with mostly non-traditional fare, including their specialty rice bowls, with sorrel pesto, sliced radishes, feta cheese, and a poached egg, with the option to add other meats. It’s filling, certainly, although I find rice for breakfast, a staple for maybe half the world’s population, a jolt to my palate. I thought the food was good, but nothing spectacular; the rice/pesto mix is made in huge batches anyway, and there was nothing I ate that I couldn’t easily replicate at home. They used good inputs, but what came after was just fair. The place is Full Hipster, if that sort of thing matters to you.

I also went back to Square One for breakfast a different day; it’s one of my absolute favorite breakfast spots in the country, and there’s bonus value in watching the zombies walk around the Scientology complex across the street. I always get the same thing – the house-cured salmon benedict, which is served over a hash brown pancake of sorts rather than bread. I don’t even look at the menu any more. And it’s a lot more chill than Sqirl.

In San Diego I just went with my standbys, The Crack Shack (where a reader of mine works, and we discovered later that he’d made the matzoh ball posole I ate for lunch) and Juniper & Ivy (menu always changing, and everything so good). I don’t mess with perfection.

Monteverde Chicago.

Fellow Top Chef fans will remember Sarah Grueneberg from season 9, where she was the runner-up to Paul Qui, who dominated the season like few other contestants have done, overshadowing her own skill set – especially when it came to fresh pastas. Chef Grueneberg left Chicago’s Spiaggia about a year ago to open her own place, Monteverde, in Chicago’s West Loop, and I finally got to try it out Friday night (and chat with Sarah herself) while in town for the Under Armour game. It could not have been any more impressive, not just for the pasta but for the quality of everything that went on every plate.

The menu is short but covers a lot of ground, from small plates to a half dozen pastas (three traditional dishes and three of their own creation) to a few substantial mains, and they accommodated me as a solo diner with some smaller portions so I could try more things. I started with the fiore di zucca, fried squash blossoms, a special right now since they’re in season and a very traditional Italian delicacy. The squash blossoms are extremely delicate and usually must be cooked within a day of their harvest; they’re stuffed with ricotta, battered, and fried, in this case with a tempura-like coating and served with a grilled vegetable relish and bright pea hummus underneath it. One was plenty – they’re so rich – but a plate typically contains three for the table. I rarely get to eat these so there was no question I was ordering it, and it met expectations largely because of the ricotta. I assume Monteverde makes their own but if not they’re using some of the best around because the texture is just perfect.

The single best dish I had on the night was the tomato salad, which is Monteverde’s riff on an insalata caprese, here using several kinds of tomatoes, some whole and some blanched and salted; apricot slices; burrata, which is mozzarella wrapped around a filling of cream that was decadent; basil; and za’atar seasoning. The tomatoes were singing – bright, sweet, just a hint of acidity, like they’d been picked an hour before. The best restaurants I’ve ever been to around the U.S. have all had one thing in common: they care about produce enough to get items like these tomatoes. And yes, the burrata was incredible, but it ended up playing second fiddle to the tomatoes.

That salad is one of the piattini or small plates on the menu, along with two other items I tried. The grilled artichoke crostini comes with fontina fonduta (fontina cheese melted with milk and/or cream and Parmiggiano Reggiano to make it into a sauce), more ricotta, a sweet Italian onion called cipolla di tropea, and shaved summer truffle. I had just one piece but the balance was perfect across the various elements because I could still appreciate the quality of the bread underneath, which had a creamy texture on the interior but the hard crust of good old-world recipes.

The other small plate I tried, specifically at Chef Sarah’s suggestion, was the fegattini calabrese, wok-fired chicken livers – yes, wok-fired – with tomato, peperoncino, corn, fava beans, shallot, and polenta ‘fries’ around the outside. Sarah said customers compare it to an upscale chicken parmesan, which fits with the tomato/chicken combination, but I also found it reminded me of the Ecuadorian dish lomo saltado, where steak is served in a stir-fried dish with French fries cooked in the same pot or skillet. It’s a true one-pot meal, with your protein, starch, and lots of vegetables within it, hearty like a winter stew, bringing richness from the livers and unexpected sweetness from the corn and the polenta.

Choosing one pasta dish at a restaurant known already for its pastas was not simple, but sitting at the bar I could see the two chefs making the pasta dishes to order, including the “twin” ravioli, where each piece contains two pockets with fillings, one with eggplant, pinenuts, and more ricotta, the other with lamb sausage, yogurt (very little), and charred onion. They’re served in a piquant red sauce with olive oil and a crushed pepper mix, although there’s just enough sauce to coat the top of the dumplings. The pasta itself remains the focus of the dish, as it’s an incredibly strong dough (they use whole eggs and egg yolks) that the pasta chefs roll out very thin for the dumplings; I’ve made pasta at home a bunch and I doubt I’ve gotten close to this kind of dough strength before, because if I rolled anything that thin it would tear. Of the two fillings, I preferred the lamb sausage and onion, which sort of gave the dish an inside-out pasta and meatballs connotation.

I tweeted some pics while I was at the restaurant and several of you said I had to try the cannoli (but to leave the gun). Monteverde makes its cannolis in-house and fills them to order with sweetened ricotta, dipping one end in dark chocolate bits and the other in bright-green Sicilian pistachios, with a painted swipe of chocolate sauce and some bitter orange bits (candied, I think) on the plate. I grew up strongly disliking cannolis, because most Italian bakeries on Long Island didn’t make their own shells, which meant they had all the texture and flavor of fried wonton strips, and used lower-quality ricotta that gave the filling a cheesy flavor rather than a sweet one. Monteverde does it all from scratch and it shows, and the part with the chocolate bits brought me back to eating straciatella (chocolate chip) gelato in my last trip to Italy in 1999.

As you’d expect Monteverde has a long wine list, but I’m not much of an oenophile and went for their cocktail menu instead. They do a take on one of my all-time favorite cocktails, the negroni, using mezcal in place of the gin and Luxardo bitter in place of traditional Campari (although Luxardo and Campari are very similar, with Luxardo bringing a more bitter and less sweet profile). It was a good way to riff on a classic, preserving the essential features, with the bitter flavors out front, with a subtle change underneath I doubt I would have identified as mezcal if I hadn’t known ahead of time.

So, I had a pretty good meal at Monteverde and while I did receive some special treatment I would have said the same things about the food anyway. I can’t imagine anyone who enjoys high-quality food, let alone high-quality Italian food, walking away unsatisfied. There’s enough diversity on the menu for just about anybody (I think you could be gluten-free here pretty easily, in fact) and every dish I had was just one bright flavor after another. I’ll certainly be going back.

The rest of my trip to Chicago featured places I’ve been before; I had coffee at Intelligentsia, as I always do when I’m in Chicago, and then stopped the Tortas Frontera location at O’Hare on my rebooked flight out (my original flight on Southwest out of Midway was cancelled). Frontera is one of the best airport food options in the country, with tortas, a pressed Mexican sandwich on spongy telera bread, made to order inside of ten minutes. I tried a new option this time, the vegetarian torta with mushrooms, black beans, arugula, and goat cheese, because I had to atone for my gluttony the night before. I’ve never had a bad sandwich at Tortas Frontera but I do find their sandwiches with meat a little heavy, whereas this turned out to be just right, especially since my flight was delayed over two hours by thunderstorms and I was on the plane for close to five hours in total.

In what may be the last MLB winter meetings at the Gaylord Opryland Hotel outside of Nashville – praise be – I got to four new places, although I did add successful revisits to a couple of old favorites.

I’ll start with Two Ten Jack, an izakaya/ramen house in east Nashville that I’d visited solo back in April and thought would be perfect for one of our writer group dinners during the meetings. It was a huge hit across the board, and this time around I got to sample much more of the menu, including many of the yakitori (grilled skewer) options as well as many of the small plates, although I wasn’t going to skip their amazing pork-broth (tonkotsu) ramen either. Highlights included the tuna poke, JFC (Japanese fried chicken, which was thigh or oyster meat, with a negi dipping sauce), crispy Brussels sprouts, seaweed salad (not your ordinary one), the yellowtail sashimi with jalapeñ, and the pork belly yakitori. I also tried their sweet potato sh?ch?, a distilled liquor with a rather distinctive aroma but very mild flavor. The executive chef, Jess Benefield, is a big sports fan, and popped out to the table to say hello; she and her staff deserve extra praise for making many items gluten-free for the member of our party with celiac disease.

I finally made it to Barista Parlor, the ultra-hipster coffee joint in east Nashville that offers pour-over options from six different micro-roasters from around the country (including Four Barrel and Intelligentsia) and roasts their own blend, called Slayer, for espresso. The space is huge for a coffee shop, and the coffee options are fantastic, although the one pour-over I tried, an Ethiopian from Supersonic roasters, ended up kind of blah – if someone had handed me that cup blind, I would have guessed it was a blend of several beans because I didn’t pick up any notes or character in it. But the Slayer rocks, pun intended, and they offer pastries from Five Daughters Bakery, including the “100-layer donut” that most folks would recognize as a cronut before they inhaled it. I did make it over to Crema, my favorite local roaster in Nashville, before leaving on Thursday, but since they’re in the Gulch it wasn’t a reasonable commute from the Opryland.

Cochon Butcher, an offshoot of the two Cochon places in New Orleans, is all about the pig – if you don’t eat pig, I suggest you give it a miss – with various cuts of pig available in small and medium plate preparations. I was there for a quick lunch between appointments and had the pork belly sandwich with cucumber and mint along with a side of marinated Brussels sprouts. The pork belly was spectacular, not too fatty, and a reasonable portion of meat for one person (although I’m a small person so perhaps others would say it wasn’t enough), although I wish it had been on better bread – it came on white bread, better than store-bought but still a bit lacking in character to stand up to the strong flavors of the pork and the mint. The Brussels sprouts were salty and a tiny bit spicy, a bit more than I’d usually eat by myself but fine for sharing with another person.

Biscuit Love was the big letdown of the trip, especially given the name and my affinity for that very southern breakfast staple. Also located in the Gulch, Biscuit Love operated a food truck and has now expanded into a sizable space for breakfast and lunch, but what just killed it for me was that the biscuit was very plain and was very flaky, more akin to puff pastry than to the crumbly kind of biscuit I expect when I’m in the south. They also offer a number of options that douse the biscuit in things like sausage gravy, which is probably delicious but something I eat about once a year because it’s just so heavy. (I do love it, though – if you’re a carnivore, how could you not?)

And then there’s Avo, a brand-new spot near Vanderbilt’s campus, housed in an old shipping container, with an all-vegan menu with almost nothing cooked beyond 118 degrees. Our server gave us the tired shpiel about how serving the food in this raw or not-really-cooked state would “preserve the nutrients,” even though this is total bullshit, but the food was actually quite good. I had the falafel wrap, sprouted “raw” (but warm and clearly somewhat cooked) falafel wrapped in collard greens, served with raw tabbouleh and mint crème fraîche. The collard greens were the one mistake in the dish – they are way too tough to enjoy when raw and could use even a quick blanching to soften them up – but if I hadn’t known that falafel was sort-of-raw I would never have guessed it. The tabbouleh was solid, if a bit heavy on the parsley, and I don’t know what they used in the crème fraîche since they don’t use any dairy. My vegetarian friend said the vegan lasagna, made with a cashew-based ricotta, was also excellent, and her dish looked like it contained was about two days’ recommended allowances of vegetables. If you’re looking for a vegetarian or vegan option and/or just need more vegetables in your diet, I recommend Avo … but I can’t say I’d be racing to go there over Two Ten Jack.

I also ate at the Pharmacy (ate too much, to be exact) and brought a small and very appreciative group to Mas Tacos, where everything was a hit but nothing more so than their elote, grilled corn with cotija cheese and paprika. I could eat that three meals a day and be quite happy about it. And the Pharmacy’s tater tots and German potato salad are both superb, although I might have gone too far getting both of those as well as their farm burger, which comes with bacon and an egg on top. I don’t know how I was even able to move the rest of that night.

The Broad Fork.

Hugh Acheson’s newest cookbook, The Broad Fork: Recipes for the Wide World of Vegetables and Fruits, is the book that’s been missing from my shelf for years: a book devoted to all manner of fruits and vegetables, ranging from simple recipes to involved ones, that’s largely but not exclusively vegetarian. I’ve tried seven recipes so far, and they all worked on the first try and produced results that made me want to make them all again. (Disclaimer: I’ve met Hugh and he sent me a copy of the book with a signed card that said he hoped this would be “the knuckleball” of cookbooks – weird, but it works. I’d say that’s accurate.)

Acheson writes that his inspiration for the book was a friend who received some kohlrabi (a member of the Brassica family, like broccoli and cabbage, but with a larger stem and sweeter flesh) in his CSA allotment and asked Hugh what the hell he could do with such an odd and uncommon vegetable. Acheson has organized The Broad Fork by season, to align with those of you in CSAs or folks like me who prowl local farmstands for whatever’s in season, although some of these recipes will work just fine with out-of-season items because of the preparations or seasoning involved. He also includes numerous preservation recipes, including pickling and fermenting, so that you can taste the bounty of one season well into the next one.

The two biggest hits so far have been recipes that star one fruit or vegetable but build it up with a sauce or other accompaniment that works in many other dishes as well. Acheson’s take on the classic Italian dish prosciutto e melone (cured Parma ham, which is very salty, along with half-moons of cantaloupe) adds a blended charred-onion vinaigrette that bridged the gap between the salty-fatty meat and the sweet fruit … and also turned out to be an ideal accompaniment for a grilled New York strip steak the following night. The griddled asparagus with pipérade and creamy grits and poached eggs would make a complete meal at brunch, and I used the remaining pipérade – a spanish preparation of onion, garlic, tomato, red pepper, and sherry vinegar – on my fried eggs the next day at lunch. (The grits in the main recipe came out too thin, but I found stirring a little flour and baking powder into the watery leftovers made an excellent savory pancake batter to have with those eggs.)

His pickled hot pepper recipe is simple and extensible to pickling other vegetables (although he has numerous pickling recipes throughout the book), and it leads into the next recipe, a salad with sliced pickled peppers, chickpeas, olives, oranges, mint, and feta cheese, which had a fantastic panoply of flavors but was too difficult to eat with a fork. (A tablespoon did the job just fine, though.) His carrots Vichy are simple and quick and complement the fresh spring carrots we’re getting around here right now without overwhelming them with butter or cream, including just a small amount of each in a recipe that cooks a pound of the roots. Even the honeydew agua fresca, which balances the sweetness of the melon with a cup of lime juice, was an immediate hit around here, one I’ll save for when east coast melons start to show up at our markets later this summer. He does call for the occasional hard-to-find ingredient – bonito flakes, Espelette pepper – although their availability is increasing thanks to Whole Foods and amazon.

Acheson includes a lot of kohlrabis – vegetables you might barely recognize, much less know how to prepare – in the book, including sunchokes, salsify, fiddlehead ferns, yacon (the tuberous root of a type of daisy; I’d never heard of it), endives, okra, and more. He doesn’t limit himself to fruits and vegetables either, with sections on pecans and various mushrooms (by season!), and the book includes numerous asides on subjects like poaching eggs, curing yolks, making vin cotto and citrus ponzu sauce, preparing a roux, preserving lemons, and making dashi and chicken stock (two ways – pressure cooker and slow cooker). He gives us a photo of his cookbook collection and a note on how he uses old books to develop new ideas, and lots of the dry wit that has made him popular as a judge on Top Chef. I’m always looking for new ideas for cooking vegetables, and the fact that Acheson has covered so many plants with easy to understand and easy to modify recipes (because the underlying ratios or concepts are so clear) make this cookbook a new essential.

Potato-parsnip rösti.

Parsnips are awesome, and wildly underconsumed in the United States (both facts according to me). A cousin of both carrots and parsley, parsnips share the carrot’s high quantity of sugars just waiting to be brought out with heat, but also have a slightly spicy aroma that always reminds me of ginger ale.

On their own, parsnips can be overwhelming, which is why they’re often paired with other root vegetables or tempered with other strong flavors like bacon or maple syrup. (Or both.) Here I use parsnips to kick up the Swiss potato pancake known as a rösti, adding flavor, texture, and extra nutrition* to what is at heart just a good large hash brown.

*Parsnips are high in vitamins C and K as well as folic acid, and have more than twice the fiber per 100 g as a regular potato does.

Potato-Parsnip Rösti

1 russet potato (going for about 12 ounces/350 grams)
1-2 parnsips (about 4 ounces/100 grams)
1-2 tsp vegetable oil
large pinch of salt
2 Tbsp duck fat, butter, or bacon fat

You want to cook these in a saturated fat, as the potatoes will brown better and of course you’ll get more flavor. If you want a vegetarian option, I’d try coconut oil.

1. Peel and grate the potato on the coarse side of a box grater. Wrap the result in a tea towel* and squeeze as much liquid as you can out of it, wringing it tightly and squeezing again after a quick rest. This is key to getting a crispy brown exterior; if you don’t get enough moisture out, your rösti will steam when you want it to fry.

2. Peel and grate the parsnip and toss with the wrung-out grated potato.

3. Add the oil and salt and toss to thoroughly mix. You could add other spices here, but I wouldn’t go much beyond salt and black pepper.

4. In a 10- or 12-inch nonstick skillet, heat 1 Tbsp of the cooking fat over medium-high heat until melted and very hot – at least 300 degrees if you have an infrared thermometer, which you should because then you can tell your daughter you’re actually a spy chef. Add the potato/parsnip mixture and press lightly to create a flat pancake that fills the skillet.

5. Cook about 8-10 minutes until the bottom is brown and crispy. This is a little tricky the first time, as it depends on your stove; you may need to moderate the heat a little to make sure the potatoes cook through without burning the bottom.

6. Flip the rösti on to a large plate, flat pan lid, or a cookie sheet. Add the second tablespoon of cooking fat to the pan, heat until melted and sizzly, then slide the rösti back into the skillet and allow it to cook for 5-6 minutes until brown and crispy on the second side.

* A tea towel … I don’t really know what the hell those are either. I have a couple of thin dishtowels that do the trick, but I also have a few white cotton handkerchiefs that I bought very cheaply a few years ago and that work great for applications just like this one.

If you love parsnips as much as I do, check out Alton Brown’s parnsip muffin recipe – I add a tablespoon of oat bran (removing the same weight of flour) and a teaspoon of vanilla, and I substitute brown sugar for half of the white – as well as the various roast and mashed parsnip recipes in Nigel Slater’s wonderful cookbook Tender: A Cook and His Vegetable Patch.

Plenty.

I’m not a vegetarian – I like bacon way too much to be so crazy, and duck confit too for that matter, and sushi, so really this isn’t going to work out – but I do believe in eating less meat as part of our overall diets. It’s better for the planet, and it’s better for the wallet, even if you choose, as I do, to spend some of the savings on buying better-quality meat, like grass-fed beef, wild-caught fish, or organic chicken. It’s probably better for your health as well, although I think that’s still up in the air. The problem is that a diet based around meat is pretty easy to plan and prepare – most meats can be marinated and grilled, or brined and roasted, or even pan-seared with a quick sauce, without a ton of active work. If you want to eat more vegetables, either with or in place of meat, you need more time and more creativity to make them taste better and fill the void left on the plate by the reduction in animal proteins. Yotam Ottolenghi’s Plenty: Vibrant Recipes from London’s Ottolenghi, a book of vegetarian recipes written by a chef who eats and cooks with meat, has filled a critical hole in my bookshelf.

Ottolenghi was born in Israel, trained as a chef in London and operates one restaurant, Nopi, and four shops in that city. His food is heavily Mediterranean, although it has strong Turkish, Italian, and Arab roots as well as the obvious Israeli influences, and at the same time grabs from other cuisines around the world, often crossing boundaries – such as his insistence that cilantro has a place in dishes that are fundamentally Italian. Plenty brings that sensibility together with the idea that a vegetable can be the star of the show, filling its pages with potential main courses and luxurious side dishes across the spectrum of vegetables, even stretching into pulses and grains before the book concludes.

I’ve tried a half-dozen recipes from Plenty so far, with broad success overall. The hits included zucchini and hazelnut salad with parmiggiano-reggiano; stuffed zucchini with rice; mushroom ragout with croutons and poached eggs; roasted sweet potato wedges; and caramelized endive with Gruyère, although that latter one suffered slightly from the way the cheese melted right off the endive halves in the oven. In general, Ottolenghi uses every non-meat tool available to boost the flavor of vegetables and make them more suitable for the central role on a vegetarian plate, including spices, herbs, acids, sharp cheeses, yogurt, crème fraiche, and the occasional runny egg. The resulting dishes burst with strong yet balanced flavors and are bright and appealing on the plate, with most recipes within reach of a moderately skilled home chef. The one disappointment, lentil galettes with a lemon-yogurt dressing, wasn’t bad, but even with all of the spices and herbs included in the mix, you’re still left with a plate of lentils, just nicely seasoned ones. Every recipe I tried was clear enough to make substituting ingredients (e.g., swapping out pine nuts because my daughter is allergic to them) simple.

The drawback to Plenty is that the instructions for several recipes don’t seem to have been tested on home stoves. When the text says “simmer gently,” what they actually seem to mean is “boil.” Oven cooking times all seemed too short, even with a thoroughly preheated oven. The book also includes volumetric measurements when weights would be more accurate. It’s a better cookbook for someone with a little more home cooking experience than a beginner would have, but if you’re like me and want to find new ways to get vegetables into your diet, whether as side dishes or as main courses, it’s perfect.

So here’s my take on Plenty‘s stuffed zucchini recipe, tweaking some of the ingredients to suit our tastes and allergies. Removing them from the pan after 40 minutes of cooking was a little tricky because I used very long zucchini, so look for short, wide fruit that will allow you to stuff them without requiring an engineering degree to extract them once they’re done.

Stuffed zucchini
Adapted from Yotam Ottolenghi’s Plenty

1 medium onion, finely chopped
1 tbsp olive oil
2/3 cup short-grain rice
2 tbsp chopped pecans
2 tbsp minced parsley
½ tsp dried thyme
½ tsp ground cumin
½ tsp ground coriander
¼ tsp ground allspice
3 Tbsp lemon juice
2 wide zucchini, sliced lengthwise
¾ cup boiling water
1½ tsp sugar
1 tsp toasted sesame seeds
about 1 oz Pecorino Romano
salt and black pepper

1. Saute the onion in the oil until translucent but not brown. Add the next seven ingredients, a pinch of salt, plus 2 Tbsp of the lemon juice and cook on low to medium-low heat for five minutes, stirring to avoid sticking, until highly fragrant.

2. Use a spoon to scoop out the centers of the zucchini for stuffing. Place them in a shallow but wide saute pan that is large enough to fit all the zucchini. (You can use more zucchini if they’re small enough to fit in the pan.) Fill them with the rice-onion mixture. Pour the boiling water, sugar, a pinch of salt, and the last tablespoon of lemon juice around the zucchini (but not on top yet).

3. Cover and cook at an active simmer for 30-40 minutes, basting with the cooking liquid several times to allow the rice to cook. They’re ready when the rice is al dente.

4. Plenty suggests serving these cold with yogurt as a sauce, but I liked these hot, topped with sesame seeds, freshly ground black pepper, and shaved Pecorino Romano.

Note: Thicker grains of rice may require more cooking time, so you might parcook them about ten minutes to get them soft before adding to the remainder of the stuffing ingredients. I’d also recommend the same if you wish to use brown rice, although that might require even more pre-cooking.

Pasta with mushroom sauce.

Amazon has Inception – which I know many of you loved – on sale today for just $8 on Blu-Ray. I liked it, but thought the film made too many sacrifices to the mainstream demands of Hollywood to make it truly great.

I’ve grown increasingly fond of using mushrooms as a major flavor in all kinds of dishes now that I’ve learned to prep and cook them properly. Mushrooms are high in compounds that trigger the umami (or savory) taste, which is intensified when the mushrooms are dried, while browning the mushrooms caramelizes the sugars but produces a flavor profile much more similar to seared meat than caramelized vegetables. This recipe takes advantage of both techniques to produce a rich, hearty sauce, thickened with pasta water and a little cream, for a filling side dish or a potential vegetarian entree if made with whole-grain pasta or served with some fresh mozzarella dressed with an herb vinaigrette.

(You will hear and read that you shouldn’t wash raw, fresh mushrooms because they are like “sponges” and will absorb the washing liquid. This is nonsense; raw mushrooms are already pretty well saturated, and when Alton Brown tested this on “The Fungal Saute” episode of Good Eats by weighing the mushrooms before and after washing, he found the mushrooms absorbed only a minimal amount of water. So wash them in a colander, then spread them on paper towels, rolling them in the towels to dry.)

I make the sauce for this dish in a stainless steel saute pan that can handle high heat, but I also run the exhaust fan and cover the smoke detector because I’m pushing the oil to its smoking point. High heat is key to browning the fresh mushrooms and I’m not giving that up just because the smoke detector is too damn close to the kitchen.

Pasta con Sugo ai Funghi (Pasta with Mushroom Sauce)

½ ounce dried porcini or other mushrooms
8 oz fresh cremini (“baby bella”) mushrooms, cleaned, stemmed*, and sliced
1 small shallot, minced
2 cloves garlic, minced
¼ cup dry white wine
¼ cup heavy cream
1 tsp minced fresh thyme
1 pound tagliatelle or pappardelle
Grated Pecorino Romano and chopped chives, to taste

1. At least a half hour before you begin cooking, pour 1 cup of boiling water over the dried mushrooms in a heatproof bowl and allow the mushrooms to rehydrate. Strain through a fine-meshed strainer or through damp cheesecloth, but be sure to reserve the soaking liquid. Chop the rehydrated mushrooms, discarding any particularly tough stems.

2. Cook the pasta according to the directions on the box, making sure to heavily salt the cooking water, pulling the pasta when it’s still very al dente. Do not overcook the pasta. When draining, reserve ½ cup of the pasta water.

3. Heat 1 Tbsp olive oil in a large, heavy-bottomed saute pan over high heat until shimmering. Add a handful of sliced mushrooms, taking care not to crowd the pan – you should still see plenty of the pan’s bottom through the mushrooms – as well as a pinch of salt. Leave the mushrooms until they are nut-brown on their cooked sides, then flip and brown the second sides. Push these mushrooms to the sides of the pan and repeat the process (adding oil as needed) until all mushrooms are added and browned.

(Don’t panic when the mushrooms appear at first to soak up much of the oil in the pan. They’ll release it as the cell walls break down during cooking.)

4. Add the rehydrated dried mushrooms and cook for about a minute, adding more oil if necessary. Add the shallot and garlic and cook for another 60 seconds.

5. Deglaze the pan with white wine, cooking until the pan is almost dry, and add the strained mushroom soaking liquid, cooking until reduced by half.

6. Add the cream and simmer (do not boil) until thickened. Thin as desired with the reserved pasta water (I add about 2 Tbsp at a time, heat through, and check for consistency). You want this sauce to coat the pasta, but not to pool in the bottom of the bowl.

7. Add the thyme and season with salt and pepper. Add the pasta and cook for sixty seconds or until the pasta reaches the desired texture, adding pasta water if the sauce becomes too thick or dry. Serve with the pecorino romano and top with the chives.

Variation: Before adding the heavy cream, add one small can of diced tomatoes with about half of the can liquid and allow to reduce slightly. Omit the pasta water.

* “Baby bella” is a marketing term, as is portobello; those are just oversized cremini. To remove the stems, just pinch the stem right where it meets the underside of the cap, and gently rock it back and forth to loosen it. You should be able to pull it right out. The tips of all mushroom stems become woody and tough, so you at least need to cut off the final half inch, but I find it’s faster to just remove the stems entirely, and it makes them easier to slice.

Cauliflower steaks … and I Want My Hat Back.

Before I get to the recipe, I have to talk about my favorite gift from Christmas this year – one I gave, not one I received. I’m not even sure how I first heard about Jon Klassen’s book I Want My Hat Back, which has apparently spawned its own online meme, but it is one of the most clever, sneakily macabre childen’s books I have ever seen, one that my daughter and I both loved on first read. It’s about a bear who has lost his hat, asks various forest animals if they’ve seen it, and eventually realizes where his hat is, a few pages after the reader has figured it out. It’s dry and a little twisted, but also perfectly captures how kids lie even when they’re caught red-handed. I’d put the vocabulary level at age 3 or 4, but the subject matter might make 5 a better minimum age. My five-year-old daughter wasn’t disturbed, and she asked to read it again last night, which is good, because I wanted to read it to her again anyway.

As for this peculiar side dish, I got the idea from the most recent issue of Bon Appetit, a magazine with which I’ve had pretty mixed results over the years. (The original recipe does include a useful photo if you can’t picture a cauliflower steak.) I’m just finishing a free subscription I received because my wife bought me one of their cookbooks as a gift, and the book included a coupon for a free year of the magazine, but I won’t be renewing because their recipes don’t work well and the magazine seems so much more focused on eating out (and expensively) than on actual cooking. Anyway, the idea of a cauliflower cut vertically into large steaks appealed to me, but I changed up the sauce to something that I thought better suited the mellow, slightly sweet flavor of well-browned cauliflower.

To cut the ‘steaks,’ start with a whole head of cauliflower and trim away all green leaves while leaving the stem intact. Standing the head on its base, make a small mark with your chef’s knife in the center of the top of the cauliflower, and then make similar marks at least ½” in either direction, enough to cut four slabs from the head. Anything less than a half inch won’t hold together when cooked; too much more than about 5/8” and you’ll only get two steaks that won’t cook through before the outside burns. You can cut the remaining florets and brown them with the steaks, or save them for another use (like soup).

This sauce is tangy, but contains no heat; you could also roast a hot pepper, like a red jalapeño, and add it to the puree, or finish the sauce with a few drops of red chile oil.

Cauliflower ‘Steaks’ with Roasted Red Pepper sauce

1 cauliflower head, cut as described into four steaks
2 red bell peppers
2 garlic cloves, peeled
1 Tbsp sherry vinegar
salt and pepper to taste
2 Tbsp olive oil

1. Roast the peppers on all sides under a broiler, about 40 minutes total (turning as needed), until well charred. Throw the garlic cloves on the same sheet pan for about ten minutes to soften and brown slightly. Set the garlic aside.
2. Place the peppers in a bowl and cover with foil for ten minutes to allow the steam to escape the peppers and separate the flesh from the skin. Remove the charred skin, the stems, and any seeds, saving the liquid from inside the peppers.
3. Place the peppers, garlic, pepper liquid, and sherry vinegar in a bowl or cup and puree with an immersion blender, or puree in a food processor. Season to taste with salt and freshly ground black pepper and set aside.
4. When the peppers are done, set the oven to bake at 400 degrees. Heat a large saute pan or skillet over medium-high heat.
5. Add 1 Tbsp olive oil to the skillet and heat until shimmering. Add two of the four cauliflower steaks and cook one and a half to two minutes until nicely browned. Flip the steaks carefully with a spatula (place your hand on the cool side to flip without splashing the hot oil on yourself) and brown the alternate sides. Remove the steaks and any stray bits of cauliflower to a rimmed sheet pan, add another tablespoon of oil to the pan, and brown the other two steaks.
6. Roast in the oven for ten minutes until you can easily pierce them through with a paring knife. Remove, season with salt and pepper, and serve on a bed of the roasted red pepper sauce. Finish with a drizzle of an assertive, peppery olive oil if desired.

Macaroni & Cheese with Gruyère and Thyme.

Before I get to the recipe, I wanted to point out that Amazon.com is selling a one-year subscription to ESPN the Magazine for $5 this week. I believe that this will also get you a year of Insider.

This is my reboot of this recipe; since I can’t abide cheddar cheese, I decided to make it with Gruyère, a milder cheese that’s also one of the best melting cheeses I’ve ever used.

Gruyère also happens to be the classic cheese at the heart of a sauce mornay, and mac and cheese is little more than cooked pasta covered in a sauce mornay with extra cheese and baked till semi-firm and golden brown on down. A sauce mornay is built on a sauce Béchamel*, one of the “mother sauces” and a somewhat secret ingredient in dishes like lasagna. A Béchamel starts with a flour-butter roux to which one adds milk (the traditional method is to steep an onion studded with a bay leaf and a few cloves in the milk first) and then simmers very gently until thickened. Add Gruyère and Parmiggiano-Reggiano to a Béchamel and you have a mornay.

*So one of the Food and Wine pavilions at Epcot this year had some dish served in a Béchamel sauce, and while I was walking by, I overheard a female tourist from somewhere in the northeast yell to her family that the dish was in a “buh-KAM-el” sauce. Granted, not everyone knows what a Béchamel is or how to say it, but if you saw that word and didn’t know it, how far down the list of potential pronunciations would “buh-KAM-el” be? Twentieth? Eightieth? A hundred and twelfth?

Since Gruyère is a French and Swiss-French cheese I went for one of the Frenchiest herbs I could think of, thyme, which pairs very well with Gruyère, and added parsley for some background music. Tarragon is probably the other herb I most associate with French cooking, but it’s too assertive for this dish in my opinion, and it’s more of a spring herb than a fall/winter comfort food flavor. Chives might work. I guess what I’m saying is that you can and should play with the herbs in this dish, just bearing in mind that the cheese flavor is on the soft side and you don’t want the finished product to taste like grass or licorice.

I’ve tried the dish with and without bread crumbs in the topping and I prefer it without, but it’s just a matter of taste. I also cut the mustard (!) in half to keep it in the background; it’s also a very French flavor but not everyone likes a mustardy smack in the mouth.

Whole Foods has organic whole wheat elbows under the 365 label for $1.99. I found a Swiss Gruyère at Trader Joes for $9.99 a pound; a roughly 10-11 ounce brick should give you enough for two batches.

1 1/2 cups elbow-shaped pasta (whole wheat works fine; you can try other shapes but it may alter the cooking time in the oven)
3 T unsalted butter
3 T all-purpose flour
1/2 tsp dry mustard
2 cups milk, anything but skim
1 1/2 tsp chopped fresh thyme
1 Tbsp chopped fresh flat-leaf parsley
1 1/2 cups (about 5 ounces) grated Gruyère cheese (nothing too fancy like “cave aged for 20 years” or anything)
1/2 cup + 2 Tbsp Parmiggiano-Reggiano
salt/pepper to tastes

1. Preheat the oven to 350 degrees.
2. In a saucier (if you have one) or deep skillet or sauté pan, melt the butter and allow to foam but not brown. Add the flour and whisk constantly until a small paste forms. Add the mustard.
3. Gradually add the milk (you may choose to heat it first for faster cooking), still whisking constantly to create a smooth liquid.
4. Allow the mixture to simmer gently for 5-7 minutes until it’s visibly thickened and coats the back of a spoon. Add the herbs, then begin adding the Gruyère in small handfuls, whisking each addition into the sauce until it’s fully integrated. (If you add it all at once and whisk, you will end up with a big congealed clump in the center of your whisk – a hot mess if ever there was one.) Add 1/2 cup of the Parmiggiano-Reggiano and kill the heat. Season to taste with salt and pepper (white pepper works well here for aesthetic reasons).
5. Cook the pasta in several quarts of salted water and drain. You don’t want the pasta sitting and waiting for the sauce, so I usually put a small pot of water on high heat when I start the roux.
6. Grease a casserole dish and add the pasta. Pour the sauce over the pasta and toss to coat. Spread the remaining Parmiggiano-Reggiano over the top and bake until the top is golden, brown, and delicious and the center is slightly firm, 20-25 minutes, 30 if you want to be able to cut firm, stable wedges of the dish.

UPDATE: Reader Steve asked about adding leeks and/or bacon. I haven’t tried this variation, but here’s how I’d approach it:
* Chop the bacon finely and crisp in a skillet, rendering out as much fat as possible. Remove the bacon to a paper towel, then add to the casserole right before it goes in the oven.
* Pour out all but maybe 1 Tbsp of the fat from the skillet and use that to sweat the leeks. Slightly browning them is optional but would add more flavor – just don’t burn them. Add with the bacon to the mix right before baking.
