Couple of Insider posts this week – one with reactions to the initial rosters for the Futures Game and one on top prospects for tomorrow’s international free agent signing period. I also held a Klawchat on Friday afternoon en route to Lakewood from Bristol.

My latest boardgame review for Paste is the two-player game Santorini, which has some light chess/Othello elements to it but is played on a smaller board (5×5) that keeps the games a bit shorter.

  • “The Time I Got Recruited to Collude with the Russians.” Long, and you may have seen it, but it seems like more evidence of wrongdoing from the Trump campaign last summer.
  • VICE details a planned (or, really, hypothetical) pay-for-play college basketball league that would focus on the Historically Black Colleges & Universities that have largely missed out on the financial windfall of modern college basketball.
  • The mother of an immune-compromised daughter who was hospitalized recently because she was exposed to chicken pox lashed out at vaccine deniers for putting her daughter’s life at risk.   • If you heard that a European Union court ruled against vaccine safety, well, not really.
  • A research paper in the New England Journal of Medicine looks at benefits of increased health insurance coverage under the ACA, including lower costs of reduction in mortality rates compared to other policies. (One of the authors is Dr. Atul Gawande, the author of Being Mortal and The Checklist Manifesto.)
  • Eater has a great profile of gelato maker Meredith Kurtzman, who recently retired after two decades in the NYC food scene, working at restaurants (notably at Mario Batali’s Otto) and earning plaudits from chefs and restaurateurs for her work. It’s a wonderful piece because it doesn’t shy away from the fact that Kurtzman isn’t a very engaging or even likable subject.
  • The NY Times is now charging for access to its cooking site, which … is fine, actually. I know there’s always a backlash when sites charge for content, but if you want good content, you’re going to have to start paying for it somewhere. I subscribe to their main site, the Washington Post, and Fine Cooking magazine, among others. However, charging for recipes is tricky because they can’t be copyrighted – you can copyright text, but not the specifics of a recipe – which makes this a little different than most subscriber walls.
  • The great BBC series Broadchurch just returned on Wednesday for its third and final season, and IndieWire ran a Q&A with star David Tennant that’s more insightful than the standard “actor talks about series he didn’t write but explains everything anyway” sort of piece.
  • The Koch Brothers plan to spend $400 million to help elect conservative Republican candidates in 2018. Repealing Obamacare and reducing taxes on the highest earners are two of their main policy priorities.
  • Daniel Vaughn’s latest list of the top 50 BBQ joints in Texas came out a few weeks ago for Texas Monthly, and if you’re visiting that state, it’s a great resource. (If you live there, well, I’m sorry.)
  • The new Presidential commission on so-called “voter fraud” – which does not actually exist on any significant scale – is really just an attack on voting rights. Even some GOP-led states are declining the requests for state voter information. Delaware hasn’t made any statement yet, but I have reached to the Secretary of State, asking them to refuse to comply.
  • Sen. Al Franken very calmly de-pantsed Energy Secretary Rick Perry on climate change, helped by Perry’s apparent lack of any knowledge on the subject whatsoever.
  • Whole Foods had long contributed to local farmers both in access to markets and in providing low-interest loans to help farmers ramp up operations to serve the chain. Now the farmers worry these programs will end after amazon’s purchase of the retailer.

My favorite protein of all isn’t bacon, or short ribs, or smoked pork shoulder – it’s duck, duck legs specifically, which are best cooked slowly until the meat falls off the bone, after which the skin is cooked over direct heat until crispy and slightly sweet, while the fat rendered out during the slow cooking process is saved for another dish, like potatoes or bitter greens or even fried eggs. The one issue with duck legs is, once cooked, figuring out how to serve them, since they tend to fall apart before they even get out of the pot. I’ve tossed duck leg meat into risotto, which is fabulous but also a lot of work, and more of a special-occasion meal than a weekday-night dish. I’ve also had them served in crepes (at Bobby Flay’s Mesa Grill) or in tacos, but again, that’s a lot more work, and not a complete meal in and of itself.

Enter farro, a whole grain that can be prepared similarly to brown rice or barley but with a starch that is released during cooking to produce a slightly creamy texture similar to that of risotto. Farro is an “ancient grain,” an unhybridized plant found in Egyptian tombs and still popular in northern Italian cuisine, part of the wheat family but very low in gluten. It’s related to spelt and einkorn but is easier to cook than the berries of those two members of the wheat (Triticum) family), and, in my opinion, it tastes better too. You can prepare farro using the liquid/farro ratios below and treat it like a risotto, starting with onion and garlic, finishing with grated Parmiggiano-Reggiano and a little butter, or you can treat it like a pilaf and stir or fold in greens or peas after the cooking is finished. Here I use it as the platter for the duck, finished with some peppery leaves for color and to make it a one-dish meal.

As for the duck meat itself, I use the braised legs recipe from Ruhlman’s Twenty, which is foolproof and can be made a day or two in advance – it’s a great thing to throw in the oven on a cold weekend day, since it makes the house smell amazing, and braised meats always taste better a day later anyway. Just store it in the braising liquid and skim the congealed fat off the top the next day. You can even strain the defatted liquid and use it in place of some of the stock in this recipe. If your local Whole Foods or similar high-end market sells prepared duck confit, that will work as well.

Farro with duck legs and arugula

4 duck legs, braised or confit
1 tbsp rendered duck fat or olive oil
1 shallot, minced
1 cup farro
¼ cup white wine or 2 Tbsp brandy
3 cups chicken stock or low-sodium chicken broth
½ tsp salt
1 handful of arugula, radish leaves, or other peppery greens

1. Shred the duck meat by hand. To prepare the skin, remove it from the legs, keeping it as intact as possible, and scrape any remaining fat off the inside of the skin using a paring knife. Crisp the skin in a dry, non-stick skillet until brown on both sides, and set aside until serving. Preheat the oven to 350 degrees.

2. Heat the fat/oil in a large (3-quart) saucepan until hot and add the shallot, sweating for 1-2 minutes until translucent but not brown. Add the farro and toast in the oil 2-3 minutes until the grains smell slightly nutty.

3. Add the wine/brandy and stir until the alcohol has mostly cooked away and the pan is dry when you separate the grains. (Lean over the pot and inhale. If you get dizzy, it’s not ready for step four yet.)

4. Add the stock/broth and salt, stir once to combine thoroughly, and bring to a boil. Cover and place in the oven for 35 minutes, at which point the farro should have absorbed all of the liquid.

5. Once the pot is out of the oven, add the duck meat and green leaves, stir, and cover for ten minutes to heat the duck and wilt the leaves. Serve in bowls topped with sliced crispy duck skin and freshly ground black pepper.

Whole Foods’ troubles.

Two articles from the NY Times this month on Whole Foods. One, “Whole Foods Looks for a Fresh Image in Lean Times,” covers the chain’s troubles trying to expand beyond the right-tail portion of the pool of grocery shoppers. There’s an underlying implication that this is due to the stagnating economy this year, but really, this was inevitable. Nearly every high-end brand eventually tries to move downmarket because the high-end market isn’t large enough to sustain the growth rates the company and its shareholders want to see. Whole Foods has been slowly moving left on the income curve through two efforts: one, becoming more competitive on packaged goods that are also available in other chains (like Kashi products, including their TLC Crunchy granola bars, a staple scouting snack for me because they’re delicious and high in fiber); and two, educating more consumers on the benefits of natural and organic foods. The media has helped on the latter front – a case of left-wing media bias of which I actually approve – but Trader Joes, also rapidly expanding, is a serious thorn in Whole Foods’ side on the former front. Indeed, we split our shopping among several stores, and we buy a lot of staple packaged foods at Trader Joes, including olive oil, balsamic vinegar, organic sugar, nuts, dried fruits, jarred artichokes and roasted red peppers, vanilla extract, eating and baking chocolate, and even specialty items like pizza dough and Parmiggiano-Reggiano ($5/pound cheaper than Whole Foods).

The second article, of course, covers Whole Foods’ response to their recent recall of ground beef. I can say with certainty that I bought and consumed ground beef from Whole Foods within the recall time frame, and did not end up in the hospital or with a minor case of food poisoning; I do cook my burgers at least to medium, which helps. More importantly, however, I was unaware that Whole Foods sold any beef that wasn’t ground in the store. The one I frequent most often has little clocks up that indicate when each type of beef (85%, 90%, and 93%) was last ground. Why would I assume that they were buying ground beef made elsewhere? And, as the Times article points out, why on earth are they doing business with a processor with a history of safety issues? I switched all of my beef purchasing to Whole Foods years ago when I learned more about how cows are fed; Whole Foods “guarantees” that all its beef is made from cows fed vegetarian diets. Do I need to question that now as well?
