First up, chef Dan Barber’s incredible talk on how he fell in love with a fish, one that’s really about sustainable aquaculture and his hopes for the future of food. I’m also fascinated by this post on waffle-fried chicken and waffles, although the chicken in that photo doesn’t appear breaded.

An unsolicited FYI in response to your Westmoreland Tweet – His condition sounds like what my girlfriend battled (cavernous angioma). It’s a bunch of bunched blood vessels in the brain that kind of dead-end and can lead to bleeding. She had it treated with a radiation-type surgery (not the most common form as of yet), and it’s possible to live a fully active life if treatment is successful.
Paul- I am pretty sure he did not name the fish. I lost the link but I believe he mentions the name of the farm/estuary and a google search would reveal the fish species. Barber had a good 2009 with a place on the Time list of most influential people as well as the James Beard Award for Top Chef in America.
