My one ESPN+ piece this week covered the possibility of realigning the minor leagues, possibly contracting several dozen teams or demoting them to nonaffiliated leagues. I held a Klawchat on Thursday.

Over at Paste, I reviewed Era: The Medieval Age, the new game from Pandemic designer Matt Leacock. It’s a roll-and-build game that reimplements his own Roll Through the Ages: The Bronze Age, but gives it better components and a spatial aspect absent from the first game.

Arizona eats, 2019 edition.

The larder & the delta was in the now-closed Desoto Central Market food hall, but has since reopened in its own space and I think it’s going to be a standby for me when I’m in Phoenix and looking for something more vegetable-forward than most of the restaurants out there. The menu draws inspiration from southern cuisine, but vegetables are more front and center than meat. My friend and I got four dishes, all from the small plates sections of the menu, including the can’t-miss vegetable beignets, which are stuffed with mixed vegetables and are huge, airy, and just faintly sweet, served with green goddess foam, a black garlic-mustard topping, and some ‘vegetable ash’ that is just for show. The hamachi crudo with citrus, herb oil, and some not very spicy Fresno peppers was also superb, almost entirely because the fish itself was so fresh – citrus is a great complement to hamachi but this fish was good enough to eat with just a pinch of salt. The hoe cakes – a type of savory, unleavened pancake that traces its roots to slaves in the American South (and likely beyond) – come with a house-fermented chow chow (a type of spicy pickle, like a chutney) and a celery leaf salsa verde, which brings the same kind of contradictory sensation as the beignet: you associate the starch with sweet flavors, and here you get acidity and heat and a slightly heavy base from the density of the cakes. My least favorite dish, although it wasn’t any worse than average, was the baby beets salad, with more citrus, escarole, fennel, and almonds, which I think suffered because it has such a muted profile compared to the other dishes. The new space is small, but with quite a bit of seating on the patio and a long bar where we ended up sitting, and they do happy hour specials from 3-6 on weeknights that looks like pretty good value.

Fellow Osteria has a menu designed at least in part by Claudio Urciuoli, now running things at Pa’la and formerly of Noble Bread/Noble Eatery, with an emphasis on fresh pastas, some made in-house and some imported, as well as pizzas and a few very traditional southern Italian plates. Their charcuterie plate includes sopressata, speck (smoked prosciutto), three cheeses, basil pesto, peperonata, and flat breads, all good but I could have taken that entire bowl of peperonata and drank it like a shooter. The orecchiette di grano arso, one of the pastas they import from Italy, is a traditional Apulian pasta made from ‘burnt’ wheat that is toasted, providing a nutty, caramelized flavor, cut with some untoasted wheat so the finished product will still have enough gluten to hold together. Fellow serves theirs with a slightly spicy sausage from Schreiner’s, a local purveyor, and broccolini; even with the big flavors of the sausage, this dish is about the pasta itself, which was perfectly al dente and also had a very satisfying, deep semolina flavor that tasted more complex than regular white pasta.

Restaurant Atoyac Estilo Oaxaca has been a bit of a white whale for me since I lived there; like its previous incarnation, Tacos Atoyac, it’s a bit out of the way of my travels for work, not very close to any ballpark except maybe Maryvale, without nothing else nearby that would bring me to the area. They do very simple, no-frills, authentic Oaxacan cuisine, with superb homemade tacos. There’s a lot of red meat here, which is a minor limitation for me, but I did fine, getting three tacos, one with chicken, one with shrimp, and one with fried fish, as well as sides of rice and refried beans, which proved more than enough for me – I could have skipped the beans, but when in Rome, etc. I’d get all three again, but the shrimp was probably the least flavorful of the three (I concede that shrimp is hardly a Phoenix staple), and I was pleasantly surprised at how much flavor the chicken had, given how much that meat is an afterthought at restaurants that focus on beef. That said, if you eat cow, they have beef cooked many ways, including asada, al pastor, lengua, and more, and also offer burros and other plates beyond tacos. Atoyac’s location is a little hard to find – I drove right past it – without a ton of parking, and it’s a barebones spot, but clean, which is all I really ask of a restaurant.

The Normal is actually two separate restaurants in the Graduate Hotel in Tempe, on Apache, close to ASU’s campus, and their new menus incorporate some dishes from the couple behind Tacos Chiwas and the just-closed Roland’s (more on that below). The morning I went to their diner for breakfast, they were out of the fresh flour tortillas required for some of their dishes, and their take on chilaquiles, with a salsa rojo, had a solid flavor profile, with a little heat and a strong earthy flavor from whatever pepper (maybe a red New Mexico?) it included, but the dish needed far more of the sauce to keep it from drying out.

I didn’t get to Bri this trip, unfortunately, but that was ‘next’ on my list of places I wanted to try. I visited a few old favorites, including FnB, which is still my favorite high-end restaurant out that way; Soi 4; Noble Eatery; the Hillside Spot; and crepe bar, which now has a sweet crepe with sunflower butter, grilled figs, bananas, and coconut flakes that is delicious and so filling (that’s a lot of fiber) that the first day I ate it I didn’t need lunch. Roland’s Market closed shortly before I got to Arizona, although the location has already been converted into a new, larger outpost of Chris Bianco’s Pane Bianco, while also serving coffee and breakfast, open from 8 am till 3 pm. I also got word that Giant Coffee, one of my favorite spaces in Arizona, has switched to using beans roasted by ROC, a local roaster whose coffees are way too dark for my tastes, which is a huge disappointment, so I stuck to Cartel and crepe bar (now using Tucson’s Presto) for coffee on this trip.

The Cooking Gene.

Michael W. Twitty’s memoir The Cooking Gene: A Journey Through African American Culinary History in the Old South won the James Beard Foundation’s Book of the Year Award this spring, as well as a separate award for Writing. Combining Twitty’s own search for his genealogical and culinary roots with a long exploration of how the enslavement and forced migration of millions of Africans defined what we now think of as the cuisines of the United States, the Caribbean, and much of South America, The Cooking Gene wanders around the globe in prose and subject in a quest for meaning and identity through food.

Twitty is a fascinating character in his own book: born in Washington D.C. in 1977, Twitty is African-American, gay, and a convert to Judaism, and thanks to DNA testing and genealogical research, he can trace his ancestry back to white ancestors in the 1800s. He’s an advocate for black culinary history in this country, leading the “Southern Discomfort Tour” and giving a TED talk on the extent to which African foodways informed and defined American cooking, notably southern cuisine, but have been ignored or underrepresented in discussions of our culinary history. He has spoken, cooked, and served at plantations in the South that formerly housed slaves, and his knowledge of culinary history is largely the result of his own autodidactic nature. He began the project that eventually became The Cooking Gene in 2011, publishing the book in 2017 (via an imprint of HarperCollins, the same publishing house that produced Smart Baseball) to great acclaim.

The narrative in The Cooking Gene is nonlinear of necessity, something Twitty acknowledges in the closing section, which meant that for me it took a while to get wrapped up in any aspect of the story, but once he gets rolling on his own ancestry the book starts to resemble a more cohesive work – even though his heritage is anything but cohesive. Twitty traces his roots back to many places, including presumed white ancestor named Bellamy whose plantation he visits, to various tribes of west Africa including the Akan people of Ghana and Mende people of Sierra Leone, and to … Ireland, of all places, which apparently got him some amusing reactions when he visited and told locals why he was there.

Every trip branches out into multiple anecdotes, just as every new DNA test he takes – there’s one, AfricanAncestry.com, that provides more specific information on African DNA lineages – also leads to new digressions and stories. There’s a lot of slave history in The Cooking Gene, much of it physically brutal, but also much of it putting the lie to the myths of the benevolent slaveholders who sent their cooks to learn French cooking in Paris, but treated them just as badly when they returned, often using the education merely as a way to increase the resale value of their ‘property.’

The broader point of this book, however, is that all cuisines we think of as distinctly American or Caribbean derive heavily from west African cooking traditions, to the point where Twitty flatly accuses many white chefs, writers, and culinary historians of a form of appropriation. Even our words for many ingredients, like okra (from ??k??r??, an Igbo word, spoken in southeastern Nigeria), trace their etymologies back along the slave trade routes from the American South and Caribbean to western Africa, where such foods and the antecedents of dishes like gumbo go back for centuries. Beans and rice, whether the Creole red beans version or the Brazilian feijão or the hoppin’ john of the Carolinas, originate in west Africa. Fried chicken, considered a staple Southern food with Scottish origins, also has roots in west Africa, where the meat was heavily seasoned and fried in palm oil. Yams, peanuts (groundnuts), and watermelon all originated in different parts of Africa, and are also now considered part of the traditional cuisine of the American South. Twitty also offers the rare example of a culinary tradition traveling the other way, from the Americans to Africa, as nixtamalization, the process of treating corn (maize) with a strong alkaline solution to remove fungal toxins while increasing the nutritional value of the product.

Twitty connects his search for his genealogical roots with his exploration of his culinary roots by combining them into a single if meandering narrative around identity – that both types of roots were, in effect, stolen from black Americans when they were captured in Africa and brought against their will to the Americas. Thus, by reclaiming the culinary and gustatory heritage of black Americans, Twitty believes he and others can continue to rebuild their cultural and ethnic identities in a country that still attempts to marginalize and disenfranchise people of color.

I listened to the audiobook version of The Cooking Gene, read by Twitty himself, which was probably not the best decision. Twitty has an endearing, folksy delivery, but pauses constantly at strange points in sentences, even breaking up phrases where no breaks belong, which I found endlessly distracting. It’s not an occasional thing – he regularly does this, as if he’s turning to the next page – and I think I’d recommend the physical or ebook formats instead.

Miami eats, 2018 edition.

I hadn’t spent any time in Miami since I went to the U to see Yasmani Grandal and Matt Harvey face each other back in 2010 – Grandal took him deep – but have now been there twice inside of nine months, for last year’s Futures Game and now to see the University of Florida’s two first-round pitchers pitch against the Canes.

The big novelty of the trip was the brand new St. Roch Food Market in the Design District just north of downtown, not far from Wynwood. This is the second St. Roch, with the original in New Orleans, and I believe this location has different vendors with the same concept – a 10,000 square foot open area with about a dozen different stalls along the walls, selling all kinds of food, including a salad stand, a noodle bar, a pasta/Italian stand, a Japanese stand with cooked and raw fish preparations, a coffee/tea bar, and a vegan bakery. You pay at each stand as you order, and at least in my case someone brought the food to my table since I was sitting nearby. I ate at the Japanese stand first, getting a seaweed salad and a grilled freshwater eel dish over rice with radishes and allegedly cucumbers (which were nowhere to be found). The vegan bakery is better than you’d expect, or than I expected, with an excellent shortbread-only version of a Linzer tarte called a ‘compassion cookie’ because they intend to donate a portion of the proceeds from its sale to animal shelters. The coffee stand uses Counter Culture beans and a high-end tea purveyor I hadn’t heard of. The whole concept is fantastic – it’s fresh food, mostly made to order, with great inputs – but on day one their execution was spotty. Another stand didn’t have one of its main proteins ready, and didn’t tell me until I’d paid and the order had gone to the cook. I’m hoping that was just Opening Day jitters.

I ate two meals down in Coral Gables, both above average. The Local is on the Miracle Mile pedestrian-only street, serving southern-inspired dishes, a lot of them takes on bar food, with an extensive cocktail list as well. Their cornmeal-crusted catfish was outstanding, perfectly crispy on the outside and hot enough that it had to have come right from the fryer; it’s served on a mild remoulade with hand-cut fries on the side that had probably been sitting a little while before I was served. They have about a half-dozen craft cocktails of impressive complexity as well.

Shelley’s is a very unassuming seafood bar very close to the Canes’ stadium, with maybe 2/3 of the menu items including fish or shellfish. I went with the server’s suggestions for both starter and main; the mofongo fritters were lighter than I expected, served with both a sugar cane compound butter and a clear garlic-chili sauce, while the rum-glazed scallops were perfectly cooked as well, but I thought the whole combination of scallops with house-cured ham and candied pecans overpowered the delicate flavor of the scallops themselves.

I mentioned Panther Coffee in my wrap-up last July, and went there twice on this trip, also grabbing a bag of beans from Finca La Illusion, a Nicaraguan farm, to bring home. I don’t know how long they’ll have it but it’s excellent, big bodied with some warm berry notes and a mild cocoa note too.

The Potlikker Papers.

John T. Edge is the director of the Southern Foodways Alliance, an institute at the University of Mississippi that is dedicated to the study and exploration of southern American culinary traditions, a valuable resource that, among other things, works to keep knowledge of the region’s cuisine from dying out in our era of homogenization and processed food. That background gave me a high expectation for his book The Potlikker Papers: A Food History of the Modern South, but it’s not the book I thought I was getting. It may deliver on the promise of its subtitle, but there’s so much emphasis here on the modern south that the prehistory of it, the hundred-plus years before the civil rights movement that inform so much of southern cuisine even today, gets lost in the shuffle.

Southern cuisine itself is more of a catch-all term than a specific style of cooking – there are multiple regional cuisines from the American south, including two, Creole and Cajun, distinct ones just within the state of Louisiana. White and black southerners bring their own traditions, although many foods associated with white or all southerners likely originated as African-American foods. The culinary appropriations, the origins of what we now consider traditional or classical southern cuisine, the subtitutions out of need that became standard … these are the stories I expected to read and want to hear as someone who likes to eat and cook many dishes that at least have some basis in the rich, vegetable-heavy dishes of the south.

That’s not this book, at least; Edge starts in the 1950s and spends nearly all of the book discussing the evolution of southern cuisine from the 1970s forward, bouncing around celebrity chefs (Emeril gets a lot of page time, as does the late Paul Prudhomme) and artisanal farmers (Glenn Roberts, founder of Anson Mills, is a well-deserved star of that part of the book), but talking less about history and more about modern figures. The best part of The Potlikker Papers by far is the first section, Freedom Struggles (1950s-1970s), which talks about southern food in the context of the civil rights movement – the Montgomery bus boycott, the lunch-counter sit-ins, the importance of individual black chefs like Georgia Gilmore, the way white politicians borrowed or fabricated narratives to suit their policy aims, and more. This is a complete story, probably enough to fill an entire volume – how food enabled African-Americans to fight for equal rights and establish economic independence in a white-dominated society that sought to subjugate them by every available method.

After that section, however, Edge’s narrative falls apart and the book devolves into a series of unconnected profiles and vignettes that were neither engaging nor particularly illustrative of anything about modern southern cooking. A chapter on barbecue, for example, that focuses primarily on North Carolina doesn’t tell me much about Q as a cuisine or the region itself (which has a complicated and recently damaging history with hog farming). The final chapter, on the rising influence of Latin American immigrants and chefs on southern cooking, feels tacked on and cursory. If southern cuisine is one big tradition, Edge doesn’t manage to unify it here, and if it’s merely the phylum for a host of individual orders and families, he doesn’t provide the connective thread beyond mere geography. I had high hopes for The Potlikker Papers, but after the first section on the civil rights era, it told me nothing I didn’t already know.

Louisville eats.

I spent three nights in Louisville late last month for the ACC tournament, which was (mostly) held at the Bats’ AAA stadium right downtown, and I ate like a king for nearly the entire trip – to say nothing of the coffee.

Garage Bar had been on my to-do list for years, since Food and Wine posted a list of the best 48 pizzerias in the United States. (I’ve now been to 29, and one of the others closed shortly after the list was posted.) Garage Bar is, indeed, in a converted garage, and the space is very Brooklyn-hipster, but damn, that’s good pizza. The style is Neapolitan-ish, with a spongy, soft dough, but not the wet centers of true Neapolitan pizzas, although they use the classic ingredients (type 00 flour, San Marzano tomatoes) of that style and cook in a brick, wood-fired oven that hits 850 degrees. I tried the Local Mushroom pizza, a tomato-less pie that delivered just what I’d want in a mushroom pizza – big mushroom flavors complemented but not overwhelmed by the flavor of the cheese, here fromage blanc, a soft, fresh cow’s milk cheese where the fermentation is stopped fairly early in the process. I also recommend the Caesar salad, which is lightly dressed, not overly garlicky, topped with fried kale strips and two stripes of white anchovy (the good stuff).

After the last game ended on Friday, I walked over to Milkwood in downtown Louisville, mostly because I just wanted to try one of Edward Lee’s restaurants even though I wasn’t that hungry. The menu is a sort of Korean-southern fusion, but I went traditional with the vegetarian bibimbap, a Korean rice dish served in a smokin’ hot bowl that continues to cook the food at the table. Granted, I could eat plain white rice till the cows come home (and it’s a good thing I don’t because white rice is nutritionally worthless), but I killed this dish despite, as I said, not being very hungry. I even got dessert because the bartender told me the peanut butter ice cream that comes with the chess pie can’t be missed, and he was right – you can keep the pie, just give me the ice cream. (Chess pie is an acquired taste; it’s a southern custard pie that typically contains cornmeal and vinegar in the filling.)

Royals Hot Chicken has only been open for about a year and a half, offering what they call Nashville hot chicken, although their version is a little different – it’s all white meat “jumbo tenders” (each of which is a half breast halved again the long way), available at any spice level you like. I’m generally not a fan of chicken breast meat because it’s so lean and, in most cases, flavorless, but the crust at Royals’ has plenty of flavor, even on the mild setting (I like capsaicin more than it likes me). They have a long list of southern comfort-food sides, but I went with the roasted sweet potato with sorghum butter (the cashier’s rec) and the cucumber salad, both of which were excellent and didn’t make the entire meal into a heavy soporific. Speaking of which, I was surprised how little oil I had on my hands after eating the chicken, which is how it should be but rarely is.

Also in New Lou is Mayan Cafe, and I’m going to tell you up front, get the lima beans. It’s a signature item for them, and they’re damn good, and so popular that the restaurant posted the recipe. I ordered the salbutes, a regional Mexican preparation of a fried (flour) tortilla that puffs up and is topped like a cracker, with toppings that change daily; the chilaquiles; and the “chocolate on chocolate” dessert, which I was told was vegan and still can’t believe given how rich the cake was. I’d probably do something different for an entree, as the chilaquiles, while vegetarian (my goal), weren’t remarkable, but everything else I ate was.

Gralehaus was a recommendation from Stella Parks, aka BraveTart, whose first cookbook, BraveTart: Iconic American Desserts, comes out on August 15th; she lives in Lexington but gave me a short to-do food and coffee list for my trip that also included Quills (see below). Gralehaus is a bed & breakfast with a restaurant and bar that’s open to the public for all three meals, and the menu is influenced by southern comfort food but hardly limited to it (there’s a tofu banh mi on the lunch menu, for crying out loud). I couldn’t pass on the black pepper biscuit with duck sausage gravy, served with a sunny egg and and some duck cracklins; it was … decadent isn’t quite the word, but certainly rich and hearty, although the biscuit itself was on the dry side. They have an excellent coffee program, with beans from several artisanal roasters including Intelligentsia and one from right near me, La Maquina, of West Chester, PA.

Against the Grain is a brewpub attached to the Bats’ stadium, with the brewery on-site, but since it was midday I didn’t drink anything, I just ate, and the food was fine – better than ballpark food, certainly, but not on par with the other meals I ate around Louisville. I had the BBQ pork belly, which was served just as a giant slab of what was essentially bacon, and it was fine, nothing special, probably in need of a first step to tenderize the meat a little more before hitting the smoke. Get the Brussels sprouts side if you do go.

The one bad meal I had was at a place called Toast, which is just a mediocre diner that doesn’t execute particularly well and doesn’t list major ingredients in some dishes on its menu. If there’s cheese on a dish, that has to be listed, as you’d list something like nuts or shellfish. That aside, the food just wasn’t good and the service was indifferent.

Louisville has quite a thriving coffee scene, including Sunergos, a local roaster whose blend won a “best espresso in America” competition in 2014 – and it’s damn good, top five for me easily (Blue Bottle, Intelligentsia, Cartel, Four Barrel), so good I went back and bought a half-pound before leaving for the airport. Their blend is mostly Central and South American beans along with some Indonesian beans as well, and the result is noticeably sweet on its own, and there’s a cocoa undertone that I adore in coffee.

Quills was Stella Parks’ suggestion and they also do a solid espresso, not as bold or sweet as Sunergos’ but creditable, and I loved their space over in the Highlands, within walking distance of Gralehaus and Carmichael’s Bookstore; it was big, bright, and full of people working, chatting, just hanging out, the way a neighborhood coffee house should be. I also tried Press on Market, where I had a light-roast Sumatran bean as a pour-over – notable in and of itself because Indonesian beans are typically roasted until dark – and was surprised to find that the beans had some character beyond the roast. It’s a stone’s throw from the Bats’ stadium if you’re downtown.

Minneapolis eats, 2017.

Minneapolis-St. Paul is a tremendous food town (or two towns, technically), thanks to its proximity to great farms, the efforts of a few high-profile chefs there (notably Andrew Zimmern), and an increasingly diverse population that’s supporting all of these new restaurants. I was only there for about 30 hours around my book signing at Moon Palace Books, but managed to squeeze in a few good meals and some great coffee.

The big meal was after my book signing at Revival, which several readers recommended and my friend Evon, who lives in Minneapolis and took me to nearly all of these spots, loves. It’s unabashed Southern cuisine, just done really well. The fried chicken is outstanding, with a crust that shatters with each bite; it comes in three varieties, plain, Tennessee hot, or “poultrygeist,” a sauce with ghost peppers. They will offer you that ghost pepper sauce on the side; don’t do this. I tasted a single drop, and I could feel the lining of my mouth and esophagus melting everywhere it made contact with the capsaicin. The sides are what you’d expect to find at a good southern restaurant; I’d recommend the mashed potatoes + gravy as well as the collard greens, the latter made with apple cider vinegar and cooked well without being cooked like a British vegetable. The biscuits were a little dense (but perfect for soaking up the ‘liquor’ in the greens); they’re served with sorghum butter, which you could really put on anything. Come to think of it, that would have been great on the fried chicken. Also, don’t miss the banana cream pie for dessert. Revival is so popular they’ve just opened a second location in St. Paul.

Zen Box Izakaya is a new Japanese sake house and ramen shop in the Gateway District in what appears to be a converted industrial or warehouse space, offering some pretty impressive ramen that I would say compares well to what I’ve had on the coasts. The pork ramen’s broth was the standout element, as it should be, but I wish they used better-quality noodles in the dish – these tasted fresh from the box. I also tried the server’s suggestion for a starter, the takoyaki, breaded and fried octopus with Japanese mayo, tonkotsu sauce, and bonito flakes; the flavors worked, but there’s definitely more flour than fish in these bites.

Patisserie 46 is a bakery and coffee shop whose chef was nominated for the James Beard Award for Outstanding Baker in 2015, and while I only had one thing, it was outstanding – a strawberry-rhubarb croissant, which was a classic croissant with layers like mica and a filling like you’d find in a fresh strawberry-rhubarb pie. They use Intelligentsia coffee for their espresso. They do some light breakfast and lunch fare and sell whole bread loaves as well.

A couple of quick hits – I found The Humble Cup just because I was staying at the Courtyard across the street (one of the nicest Courtyards I’ve ever stayed in, BTW) and was pleased to find they offered pour-overs using beans from local roaster True Stone Coffee. I’d skip the baked stuff but this is good coffee done correctly … I’ve mentioned George & the Dragon here before, but ate lunch there before heading to the airport; the food has always been excellent, and the pork banh mi I had this time was no exception, mostly because the pork, from local purveyors Compart Duroc, was so flavorful thanks to the five-spice seasoning. If you go and see the owner, Fred, tell him I sent you (he’s a fan too).

Finally, I ended up eating lunch at an unexpected spot: the boardgame cafe at Fantasy Flight Studios in St. Paul. FFG, now part of the Asmodee group (which also includes Days of Wonder, Z-Man, and Plaid Hat), operates a huge gaming space that has a real restaurant in it preparing most dishes from scratch and offering local craft beers on tap. Kyle Dekker, who runs the space and has been a longtime reader of my baseball work, gave me the tour; among other touches, they operate one fryer just for French fries, ensuring no cross-contamination with gluten or other allergens/problem foods. There’s a boardgame store in front and a huge library in back for folks to hang out and borrow a game (or three) and play while they eat, and both sections include games from other publishers. It’s an incredibly impressive undertaking and Kyle said they can be packed on weekends when the weather isn’t great. I’d be there all the time if I lived in the Twin Cities (which I might if it wasn’t located inside the Arctic Circle).

My Insider column this week was on players I got wrong, specifically those I underrated (or didn’t rate) when evaluating them as prospects or younger players. I also held my weekly Klawchat here on the dish, which, again, is where they live now.

Nashville eats, 2014 edition.

Nashville is awesome. If they had a major-league team there, I could live in Nashville very happily. The food scene is amazing, I hear the music scene is pretty good, the city is full of vibrant neighborhoods with distinct identities, and it’s growing – having a great university right in the city doesn’t hurt. It’s a shame its reputation has to be scarred by the proximity of the Gaylord Opryland Hotel & Gouging Center, but that’s well outside the city limits anyway.

The centerpiece meal of the trip was the new location of Husk, Sean Brock’s second outpost under that name after the flagship restaurant in Charleston. Like the original, the Nashville Husk is located in a converted house, but it’s roomier once you get inside and has a large bar area in the basement rather than in an adjacent carriage house. The menu changes daily, so what I describe here may not be on the menu even if you choose to go soon.

I went with a friend and because we were seated 15-20 minutes after our reservation time, we ended up with a starter compliments of the kitchen – Carolina rice griddle cakes with a pimento/jalapeñ cheese spread. The cakes were ridiculously good, with the crispy texture on top of cornmeal cakes (thanks to lots of sugar caramelizing in some sort of not-good-for-you fat), soft and steaming in the center, but not flat or dry like a lot of pancakes that don’t use much wheat flour. There was, however, a greater chance of Dan Vogelbach playing shortstop in the majors than there was of me liking that cheese spread. I contented myself with the Parker House rolls served as starters. That’s a traditional New England roll made with milk and baked all stuffed into a pan so that you only get a crust on the top and bottom, with the sides of the rolls all touching and coming out in a sort of square-like shape. These were the best I’d ever had, the lightest and the most flavorful, with the benne (we call them sesame) seeds on top a nice touch.

The pork ribs starter was meager at two regular-sized ribs and a runt, but the sweet/hot glaze along with a little crumble of peanuts stuck to the top was a winner. It felt a little awkward to eat ribs in such a nice restaurant – the only correct way to eat ribs is primally – but Husk prepared them in a way I hadn’t had them before, with plenty of bark on the top and texture contrast from the peanuts that, now that I’ve had it, I’ll miss the next time I have plain ol’ smoked ribs.

For my entree, I chose the grilled catfish, in part because I had a catfish dish at my first visit to the Husk in Charleston. The fish on my plate was incredibly fresh, as Brock is among the leaders in using high-quality local ingredients and making sure the diner knows where his food came from, but it was a shade too rare, so the top didn’t have much in the way of grill marks or the texture that comes from the Maillard reaction, while the interior was just a bit too soft. The deconstructed hoppin john, with the rice and beans cooked and served separately, was superb, with a citrusy flavor to the beans reminiscent of the Brazilian black-bean dish feijão.

I also tried a local beer, Jackalope’s Bearwalker Maple Brown Ale, where the brewers add maple syrup to the beer during the “conditioning” or secondary phase of fermentation. By this point, the remaining yeasts are working on the more complex sugars, so adding maple syrup, which contains mostly sucrose with a few monosaccharides as well, at that stage is … well, I’m not quite sure how that works, so if someone out there knows brewing chemistry I’d love to get an explanation. I do like the idea of adding sweet flavors where the yeasts will consume the sugar but the beer will contain the flavor so that you get the “memory” of the sweetness (associated with that flavor) without making the beer sweet.

Pineville Social is one of two Nashville restaurants nominated for a James Beard Award this year – the other is called The 404 Kitchen, but I couldn’t find it – and it’s as notable for its space as it is for its food. The restaurant itself is huge, in a converted warehouse of some sort with high ceilings and a giant, gaudy square bar in the center and six bowling lanes in the back. I managed to sneak in there for Saturday brunch before the Vanderbilt game that afternoon and tried the fried chicken and biscuits you saw on my Instagram feed that day. It was as good as it looked – perfectly fried hunks of chicken breast on a tender biscuit with a smooth, rich white gravy on top. There were no gimmicks, no hot sauce, no pickles, nothing that didn’t belong there. I actually never ate dinner that night.

Crema is a new coffee roaster located very close to Pineville Social Club, which uses their beans for its in-house coffee bar, and the locals seem to have caught on that Crema is very serious about coffee prep. They offer seven or eight varietals for pour-overs and two blends for espresso, and the baristas take their time to make sure each drink is prepared correctly. I preferred their espresso, which had great body and moderate acidity, to the pour-over I had with their Kenya beans, which was a little underextracted. According to one of the baristas, they purchase directly from farms, but their trade is truly direct only with farms in Central and South America, where someone from the shop is actually traveling to those estates. Based on conversations with one of you in the business, it seems like Crema was roasting and selling beans from last year’s harvest, which isn’t ideal but still miles ahead of what you’ll get at Corporate Coffee. This is also the first artisan roaster I’ve seen in a while with beans from Yemen.

I also ate two meals at Fido, one lunch and one breakfast. The latter happened when I called an audible; Buster Olney, who doesn’t like to talk about it much but actually went to Vanderbilt, recommended the Pancake Pantry, which unfortunately had a line at least 40 deep at 8:20 on that Saturday morning. Fido’s my favorite quick spot in Nashville, though, with a little of everything, cooked to order but served fast, including really good hash browns, and just a great lively vibe about the place. They also have a huge list of specials that is usually where I find my order, although on this trip I ordered off the menu twice as they had a lot of dishes with spinach, which I unfortunately can’t eat.

Nashville eats, 2012 edition.

I ate really, really well in Nashville this week, which is what happens when you get the hell out of the Opryland Hotel, itself a testament to what happens when capitalism’s DNA mutates and reproduces out of control. Over the last five years it seems that Nashville has had a culinary boom, and I had more places I wanted to visit than I could have gotten to in a week.

Our first big group dinner was Monday night at City House, one of the most-recommended restaurants in Nashville by those of you who live there, and one of the most enjoyable meals I have ever had when you combine the food and the company at the table. Because of the size of our party, we were served family-style, which had the benefit of allowing us to all try more items. I thought two items really stood out above everything else: the belly ham pizza and the bread gnocchi. We tried all four pizzas on the menu, with the anchovy pizza the only disappointment, but the belly ham pizza with fresh mozzarella, oregano, and a pretty healthy dose of red chili flakes was incredible, from the light, almost cracker-like crust to the bacon-like pork to the bright, creamy cheese. The gnocchi, without potato as traditional gnocchi would have, were the best I’ve ever eaten (caveat: potato gnocchi don’t thrill me) and are served with a scant tomato sauce, braised pork butt, and grana padano (essentially Parmiggiano-Reggiano from cows near but not in that specific region). That’s the dish everyone was talking about the next morning. The octopus starter everyone’s joked about was just fair, cooked correctly (that is, not till it was a spare tire) but still not that pleasant a texture and without the powerful flavors to stand up to the fish. I loved the rigatoni with rabbit sugo and fennel, kind of like a duck ragout with big flavors from the aromatics and tomato. That night’s special dessert was a chocolate-peanut butter pie that would put Reese’s out of business.

Tuesday night’s dinner included at least 16 of us from the media side at the Pharmacy Burger Bar and Bier Garden, one of the best burger places I have ever visited. Their burgers are made with Tennessee-grown beef and served on stark white rolls that are as soft as potato bread and are custom-baked for the Pharmacy. They hand-cut their fries, including skin-on sweet potato fries served without that annoying sugar topping so many places use or any tricks to make them crispier, and they serve their own tater tots, which might have been an even bigger hit than the burgers. They also had a strong selection of regional beers, including the Nashville-brewed Yazoo Gerst Amber beer, so smooth it went down almost like soda and might be too mild for folks who are more serious about their beer than I am. As for the burgers, most of us went for their signature item, the Farm Burger, with bacon, country ham, and a fried egg on top, which is a top five burger for me at this point.

We ventured out to two new lunch places, Fido and Marché. Fido is related to the Bongo Java coffee shop and retains that coffee-shop vibe even when serving sandwiches or fish entrees like the trout special I ordered, along with a cinnamon cheesecake that Jonah Keri said was to die for and a chocolate-chocolate chip cookie that also really strong. Marche offers a duck confit sandwich about which one probably needs to say little more, because really, it’s some damn good duck confit. Molly Knight ordered a latte which was large enough to drown an orangutan. Both places were worth hitting again, especially because they gave us a chance to eat somewhat more healthful items in expectation of big dinners.

On the way to the airport I made a detour to revisit Arnold’s Country Kitchen, a meat-and-three place that seems to rate as Nashville’s best and where I had a great meal back in 2007. The meats change every day as do about half of the sides available; Thursday’s options included roast beef, while mashed potatoes and turnip greens (with ham hock) appear to always be options. One of the special sides that day was fried green tomatoes, about four-inch discs breaded with seasoned bread crumbs and quickly deep-fried. They’re not good for you – none of this is – but the salty-sour combo was surprisingly satisfying. For dessert, they offered four different kinds of pies plus a few other options. The hot pepper chocolate pie wasn’t very popular but I’d gladly eat that again – the filling had the texture of a dense mousse and the flavor of half-cooked brownies, and once you finished a bite, a warm heat took over from what I assume was cayenne pepper. A meat, three sides, bread (which I skipped), dessert, and a drink ran about $13 and I was full for the whole flight back to Arizona.

Finally, the headline meal of the trip was at The Catbird Seat, named one of the ten best new restaurants in the U.S. this year by Bon Appetit. This was the most expensive meal I have ever eaten, and one of the longest at over four hours and nine-plus courses. It’s a set tasting menu, and the food tends toward the experimental – not quite Alinea territory but along the same philosophical lines. All of the courses hit the mark save one, and I was challenged by a number of the dishes to rethink ingredients or flavors. If you’re not interested in a $150+ meal that goes on for days, feel free to stop reading here – that’s why I’m covering this last. Also, each dish comes with a wine pairing, which the sommelier introduces and explains in some depth, but as the group’s driver I skipped this part.

* The meal began with quarter-sized ‘oreos’ made of a parmiggiano cream or mousse sandwiched between two slices of porcini mushrooms, producing a gustatory dissonance as my palate kept expecting sweet. The point of this starter, other than just being playful, became evident later on.

* The first actual course was a trio of one-bite items, including a raw Island Creek oyster with kimchi and a lime foam, a “cracker jack” using shiitake mushrooms roasted until crunchy, and a rectangle of chicken skin baked until crunchy and topped with ground red pepper for a twist on Nashville hot chicken. That’s the first raw oyster I’ve ever eaten, incidentally – growing up on Long Island during a time when raw oysters were quite dangerous to eat, I had no exposure to them and had (have?) a long-standing bias against raw shellfish of any sort. The faux cracker jack was the best item here, combining the earthiness of the mushroom with the hint of sweetness and crunch you’d expect from something that looks like caramel corn.

* Second course was a diver scallop crudo, sliced thinly, served with their own dashi, smoked roe of Arctic char, crumbled chicken skin, lime juice, finely minced serrano chiles, soy sauce, and shiso leaves. As complex as that sounded, and even looked, the end result was perfectly balanced and nothing overshadowed the scallop itself. This was also one of the largest portions of the night.

* Third course was a soup of roasted sunchoke and caramelized yogurt, poured tableside over a quarter of an artichoke heart, shaved roasted fennel, black olive, black garlic, and a tiny bit of black truffle. Cooked yogurt is very much not my friend, but the texture of the soup was unreal, like double cream, and the roasted sunchokes gave it the appearance of a rich light-brown roux with hints of sweetness and a nutmeg-like spice.

* Fourth course was Arctic char with cream cheese gnudi, dill-infused oil, pureed Meyer lemon (rind and all, apparently), capers, and sorrel leaves. I love Arctic char, a fish nearly indistinguishable from salmon, but prefer it cooked a little past medium rare; this was practically swimming upstream. The gnudi, marble-sized spheres of (I presume) cream cheese with just enough flour to give them structure, had the texture of potato gnocchi and just a hint of the tang from the cheese so that they could soak up some of the dill flavor below them. (Gnudi means “nude” in Italian and refers to a filling cooked without its pasta wrapper.)

* Fifth course was probably the restaurant’s signature dish, roasted pigeon leg, served with the claw still on it, along with a celeriac ribbon, smoked butter, cured egg yolk, chestnut purée, and huckleberry reduction, with the last two items perhaps a play on peanut butter and jelly. Pigeon (usually marketed here as “squab,” for obvious reasons) was another first for me, here cooked rare with a flavor like that of a duck breast with a texture a little closer to a rare lamb rib chop. The chesnut purée stole a fair bit of the show, though, with the crisped skin of the pigeon also standing out.

* Sixth course was a large medallion of rare “Wagyu” beef ribeye with roasted Belgian endive, little spheres of Asian pear, roasted maitake mushroom, and walnut butter. This was by far the most generous portion of the night, but a little tricky to eat with all the components in one bite, in part because the beef, while tender, wasn’t quite that “like butter” consistency I’d expect from that particular cut. (There’s also a lack of labelling standards for “Wagyu” beef, but I’ll trust that the Catbird Seat is at least buying very high-quality inputs.) Getting a sphere of anything the size of a large marble on to the fork with four other elements is nearly impossible, even though the fruit’s mild sweetness was a perfect complement to the various savory elements. Great ideas here, but perhaps not fully executed.

* Seventh course was the one whiff for me, Rush Creek Reserve cheese with a curried granola, rose-water honey, and apricot jam. The cheese looks like mayonnaise and had a heavy, cheddar-y flavor that I simply don’t like. It’s supposed to be one of the best domestic cheese around, so I’m chalking this up to my specific palate and not the dish itself, although Jonah expressed his dislike of the curried granola, which I probably could eat by the bowl.

* From there we move to desserts, three plates although they’re listed on the menu as just two courses. Course 8A was a play on coffee and tea, with coffee ice cream, molasses cake, rooibos (red tea) foam, and a hazelnut and coffee crumb, just insanely good across the board, a dessert where everything was sweet but nothing was too sweet, and a great way to show off the complexity of rooibos’ flavor. (I happen to love the stuff, and especially like to drink it when I’m sick because it has no caffeine.) Course 8B was a maple-thyme flan-like custard cooked in an egg shell with a maple glaze on top and a single stick of bacon protruding from the top – an egg-and-bacon dish that implied there were pancakes on the plate that required the use of maple syrup.

* The ninth course was the most impressive dessert from an execution perspective: charred oak ice cream, vanilla cake, pineapple gelée, and bourbon balls – bourbon encapsulated in a very soft gel so they’d explode in your mouth almost on contact. The ice cream here was smoky but also had subtle flavors that reminded me of caramel, coffee, and of course whiskey, and its texture was as smooth as that of good gelato.

* Finally, another small plate of three Oreo-like items appeared, but this time, they’re sweet, with chocolate wafers and a vanilla cream. They don’t taste anything like the real thing, but speaking as a devout chocoholic, I appreciated the hit of bitter cocoa at the end of the meal.

Someone in Nashville asked me if I preferred the meal at City House or the one at the Catbird Seat but I struggled to compare them. City House is pretty straightforward upscale cuisine – recognizable dishes, done well from start to finish, using fresh, local ingredients with outstanding execution. You will also leave there stuffed. Catbird Seat is experimental and challenging; it isn’t food to be consumed so much as it’s food to be considered. Your preference would likely depend on what you prefer. Catbird Seat is doing things very few restaurants outside of New York, LA, and Chicago are doing, and that makes it the “better” restaurant, the place I’d absolutely take my wife for a special occasion or a client I wanted to blow out of the water. On the other hand, if my goal was to go have a boisterous meal with nine friends, which was what we did on Monday night, I’d take City House. You can’t lose either way.
